Quixote is the Oaxacan restaurant at The Lafayette Hotel & Club, built inside a salvaged hundred-year-old church, with one of the deepest agave collections in San Diego behind the bar. Tequila, mezcal, raicilla, sotol. The bar runs a full dining room as well as its own seats, so you are making cocktails for servers and taking care of guests in front of you at the same time, and both have to be right.
You should have real bar experience and some genuine curiosity about agave. You do not need to know every bottle on day one, but you need to want to. The rest is the usual: know the food, own your station, keep the pace up on a Saturday night, work nights and weekends and holidays.
Pay: $32.00 - $48.00 per hour
