Overview
Duckstache Hospitality is excited to announce that we are looking for a talented Chef to lead our kitchen team as Chef de Cuisine (CDC) at Doko & Bar Doko, located in Autry Park. This position offers a starting salary of $70,000 annually. As an employee of Duckstache Hospitality, you are also eligible for our benefits program which includes 15 days of paid time off. Paid time off is immediately available and will be prorated for the remainder of the year. Additionally, you will receive a discount of 95% on dining for yourself and one other guest at all Duckstache Hospitality restaurants. Duckstache Hospitality offers company sponsored health benefits following the completion of a 60-day probationary period.
About Doko
Chefs Patrick Pham and Daniel Lee have over 30 years of combined experience in Japanese cuisine and sushi. They established their culinary careers in Houston where they worked together for four years at an award-winning Japanese restaurant. Pham and Lee teamed up to bring new curated dining concepts to Houston’s food scene and kicked off a series of omakase pop-up dinners called Secret Taste. In 2019 Pham and Lee opened Kokoro Sushi and Yakitori in the Bravery Chef Hall in Downtown Houston, and following their success opened Handies Douzo shortly after along with Aiko & Himari. Doko is a chef-driven concept where Chef Patrick and Daniel will be showcasing their talent and creativity daily.
Duties and Responsibilities
The primary job duties and responsibilities of being a CDC include but are not limited to the following:
- Upholds company culinary standards and practices
- Ensures the quality of all products served
- Trains, manages, and develops kitchen staff
- Creates labor projections and schedules
- Maintains low staff turnover and high morale
- Organizes the kitchen layout for efficiency
- Assigns and supervises daily line and prep stations
- Conducts menu cost analyses
- Manages food inventories and product rotation
- Inspects and tags incoming products, signs and adjusts invoices
- Establishes ordering guides for kitchen operations
- Organizes and labels food storage areas
- Maintains kitchen equipment and facilities using checklists and schedules
- Upholds the restaurant’s brand and hospitality standards
- Oversees daily shifts in a fast-paced environment
- Cultivates strong guest relationships
- Motivates staff through rewards and incentives
- Addresses kitchen issues promptly
- Controls food and labor costs
- Ensures compliance with health code regulations
- Completes required checklists
Enforces company policies and standards
- Performing other assigned duties
Qualifications
Duckstache Hospitality requires the minimum qualifications to successfully perform the position of CDC.
Language:
- Fluent speaking, reading, and writing: English. Spanish preferred but not required.
Qualifications:
- Minimum 2 years of experience as a Chef in a similar environment
- Texas Food Handlers certificate
- Excellent guest service skills
- Good memory
- Flexible availability in scheduling
- Capacity to multitask
- Ability to work as part of a team

Required Education:
- Culinary degree from an accredited institution
Working Conditions
The incumbent will be working in a restaurant setting, on the floor with guests, in the kitchen and dish area. Potential hazards include but are not limited to cuts, slipping, tripping, falls and burns. Frequent hand washing is required.
Physical Requirements
The incumbent is required to stand/walk for long periods of time. Incumbent is regularly required to talk and hear. This position is very active and requires the ability to lift up to 40 lbs. and be able to constantly move around in the restaurant.
