Overview
Thank you for considering applying for our General Manager (GM) role. We argue that our GM’s are the most important individuals in our entire company. Why wouldn’t they be? After all, they manage our people (Team Members), product and profit. With this in mind, we believe that we must create a platform where our GM’s can thrive inside, and outside, of the organization.

We’re a fast growing company. We’re on track to open five corporate locations in our first 18 months of operation during a global pandemic, which is a very uncommon accomplishment in our industry. We’ll enter the US market in 2023 and continue to grow from there to embark on our vision to have the world celebrate the flavours and culture of Peru.

Nike popularized running shoes. Starbucks did the same with Italian coffee. We want to become the brand that’s synonymous with the flavours and culture of Peru.
Brasa Peruvian Kitchen is a fast-casual restaurant serving everyday foods like salads and warm bowls with real Peruvian flavours.

How We’re Different
● We donate $10,000 for every store that we open to Cuso International (a Ottawa-based not-for-profit), who deploy the funds to urban farming projects in Peru and help reduce food insecurity in the country.
● General Managers have unlimited vacation. Take six weeks if you like, we trust that you have groomed a great supporting team and that your P&L’s will look great in your absence. With this being said, our leaders know not to take a vacation when we’re opening a new store or while other supporting team members of theirs have already confirmed a vacation. Treat our business fairly and we will do the same to you. Simple.
● Our head office team does all recruiting and interviewing of Team Members at our retail locations. We have done this so General Managers primary focus can be on operating the store.
● Every General Manager will have a Product Manager and Culture Manager on their respective teams to aid the management of the stores.
● We will review compensation every three months. This is a proactive approach to a topic that most companies shy away from. Our training program will include a module that educates you on how to successfully ask for a raise at Brasa (or anywhere, really).
● Our starting income (another phrase for minimum wage) for Team Members starts at $21/hour. We believe there are two types of companies: ones that try to pay their employees less and ones that try to pay them more. We’ll be the latter. This higher wage will help us recruit high calibre people to join our team.
● Every employee is immediately enrolled in our benefits program. You don’t have to wait for the probationary period to end.
● We don’t believe in paying bonuses when a company achieves a goal that is often paid months later. Instead, we’re going to give higher hourly wages and salaries from day one, and hire ambitious team members who have enough pride to always want to achieve their goals. Plus, we think this is better for you when dealing with lenders like a bank (they don’t care about potential bonuses or commissions).
● Our goal is to hear you say “I’ve never worked in a company like Brasa before.” We’re very genuine about this goal and it’s not just a platitude.

SIX CORE RESPONSIBILITIES OF THE GENERAL MANAGER
CORE RESPONSIBILITY #1: In-Store Leadership and Guest Experience
Your leadership at our retail stores is paramount to our success.
● Possessing an engaged on-floor presence and role model standards in dress code and operating practices.
● Coaching team members and management on a daily basis, leading daily briefing, and driving the energy of the team.
● Regularly circulating stores to ensure proper organization and cleanliness.
● Overseeing team members’ performance, KPI’s, attendance, comments and concerns.
● Along with our People Operations Manager, overseeing and managing the team member offboarding and termination process.
● Continuous reviews of Team Member performance.
● Attend weekly management meetings and other performance related meetings.
● Assisting in onboarding new team members
● Assisting in celebratory moments for high-performing team members and guest experiences.
● Assisting in developing and maintaining our customer experience strategies, such as our Micro Customer Experience gifting program.
CORE RESPONSIBILITY #2: New Store Openings
Our General Manager will play a leading role in new store openings. This responsibility will include, but will not be limited to:
● Working collaboratively with the project manager, VP Strategic Sourcing and Product Experience and general contractor.
● Maintaining opening/closing checklists and supervising the team to ensure all items are completed daily.
● Working with our product suppliers to ensure the new store has been effectively integrated into our supply chain.
● Assisting in coordinating marketing assets for the grand opening.
● Developing and maintaining our New Store Opening Playbook
● Leading new team member onboarding training
● Being present onsite, full-time for the first 30-60 days
CORE RESPONSIBILITY #3: Facility and Equipment Leader
In collaboration with our VP Strategic Sourcing and Product Experience, our General Manager will be responsible for maintaining, selecting and ordering all of our kitchen equipment and assets. This responsibility will include, but will not be limited to:
● Maintaining strong relationships with all of our suppliers and vendors.
● Internal contact for health inspector, WSIB, Fire Inspector and Municipal Inspectors.
● Being the single point of accountability (SPA) for all equipment repairs and maintenance using ResQ.
● Regularly auditing our facilities and equipment to find cost savings, service before warranties expire and maintain equipment in good shape.
CORE RESPONSIBILITY #4: Food and Labour Cost Management
The General Manager will be the single point of accountability in maintaining our food and labour cost key performance indicators (KPI’s). This responsibility will include, but will not be limited to:
● Weekly, monthly, and quarterly monitoring of our food and labour costs.
● Working closely with our finance leader in strengthening our performance and profit margins.
● Developing and managing our loss prevention and theft programs.
● Monitoring and developing waste improvement plans and systems.
● Developing and maintaining weekly employee schedules across all stores, adhering to our labour budget while simultaneously delivering an excellent customer experience.
● Setting and monitoring par levels according to store volume.
● Being careful not to over-order but also to not run-out of items
● Ensuring that all food and labour costs are accurately recorded within our software programs across all stores.
CORE RESPONSIBILITY #5: Product and Quality Assurance
Brasa Peruvian Kitchen will not achieve its potential if we don’t have a tactitional approach to product quality. Our focus on product quality is priority number one. This responsibility will include, but will not be limited to:
● Inspecting what you expect.Spot checking to ensure product quality is being adhered to.
● Providing coaching to Team Members and other managers to ensure product quality is managed daily.
● Creating, managing and auditing all of our food safety protocols.
● Assisting in management of our mystery shopping program and customer interviews.
● Developing and conducting quarterly product quality audits.
CORE RESPONSIBILITY #6: Management of KPI’s, Playbooks and Software
In order to effectively open 100 stores before 2027,[1] our systems and processes will be carefully documented and act as roadmaps to scale our business. This responsibility will include, but will not be limited to:
● Adhering to our playbooks for all systems and processes.
● Manage your stores Net Promoter Score (NPS)[2] , Google Reviews, Team Member feedback, and other KPI’s related to guests and Team Members.
● Bring forth ideas on how to optimize and improve all playbooks.
● Along with our People Operations Manager, manage Team Members schedules, payroll, and benefits questions.
● Engage within internal software such as Slack and Net Promoter Score.
● Good knowledge in restaurant specific softwares ie: Toast, R365, Push etc…
CORE RESPONSIBILITY #7: Local sales and Community outreach
● Proactively identify and build relationships with local businesses, gyms, studios, fire stations, police departments, schools, and community organizations.
● Conduct weekly outreach (in-person or by phone/email) to promote Brasa’s catering, group orders, and corporate meal programs.
● Distribute sampling kits or complimentary tastings to targeted high-potential partners to drive awareness and trial.
● Maintain a local sales pipeline and track outreach, follow-ups, and conversions.
● Collaborate with the marketing department to secure promotional materials (flyers, QR codes, catering brochures) for community distribution.
● Organize and attend local events, pop-ups, or vendor fairs to increase brand visibility.
● Establish recurring catering partnerships with nearby offices, gyms, medical clinics, and community organizations.
● Monitor and analyze community outreach results to identify opportunities for improvement and growth.
● Represent Brasa in the neighbourhood as a brand ambassador, ensuring strong local presence and engagement.
● Work closely with the operations team to ensure seamless execution of catering orders initiated through local sales efforts.
