Gallas Pizza & Tavern is a high-volume, neighborhood-driven pizzeria and sports bar known for great food, warm hospitality, and a strong sense of community. We are looking for an experienced and motivated General Manager to lead daily operations, develop our team, and uphold the standards that makes Pizza & Tavern a local favorite.
About the Role
The Assistant General Manager is responsible for supporting the GM in front-of-house and some back-of-house operations. This leader ensures exceptional guest experiences, strong financial performance, and a healthy, positive workplace culture. The ideal candidate has a minimum of 2 years of full-service l Management experience, thrives in both FOH & BOH, and can confidently run a busy, scratch-casual pizzeria environment.
Experience with Restaurant365 is a major plus.
Key Responsibilities
Operational Leadership
- Oversee all daily restaurant operations, including FOH, BOH, bar, and to-go.
- Maintain consistent execution of food quality, service standards, cleanliness, and safety.
- Lead pre-shift meetings, set expectations, and ensure strong floor presence during peak hours.
- Manage ticket times, expo performance, and guest satisfaction in real time.
People & Culture
- Recruit, hire, train, schedule, and develop all FOH & BOH team members.
- Create a positive, accountable environment where employees enjoy coming to work.
- Coach team members through clear expectations and follow-through.
- Lead by example with professionalism, communication, and hospitality.
Financial Management
- Manage labor, food cost, and operating expenses within target percentages.
- Analyze weekly P&L data and identify opportunities to improve performance.
- Use Restaurant365 (or similar platforms) to manage ordering, inventory, invoicing, and scheduling.
- Ensure portion control, waste minimization, and consistent recipe adherence.
Guest Experience & Community
- Ensure every guest receives a warm welcome and exceptional service.
- Resolve guest concerns quickly and professionally.
- Maintain a strong community presence and uphold Galla’s brand values.
Qualifications
- Minimum 2 years of Assistant Manager experience in a full-service or high-volume fast-casual restaurant.
- Strong FOH and BOH operational knowledge (scheduling, expo, prep, ordering, inventory, food safety).
- Experience with Restaurant365 is a major plus.
- Excellent communication, organization, and leadership skills.
- Ability to thrive during high-volume shifts.
