We are seeking an experienced, detail-oriented Morning Prep Cook for high-volume dinner and breakfast services.
In this dual-focus role, you will split your time between dinner prep and precision pastry and baking. You must possess sharp knife skills, a deep understanding of flavor profiles, and strict adherence to classical technique. - Savory Execution: Execute prep recipes, including making stocks, mother sauces, reductions, marinades, and emulsions from scratch
- Protein Fabrication: Clean, portion, and trim meats, poultry, and seafood according to exact weight and portion specifications.
- Component Assembly: Prepare intricate multi-component garnishes and vegetable preparations for the evening line stations.
Precision Baking & Pastry
- Scratch Baking: Mix, shape, and bake artisan breads, dinner rolls, pastry crusts, and signature evening desserts daily.
- Formula Scaling: Accurately measure and scale dry and wet ingredients using metric weights to ensure consistency.
- Fermentation Control: Monitor proofing times, dough temperatures, and oven rotations based on ambient kitchen conditions.
Kitchen Logic & Flow
- Station Management: Organize the walk-in coolers using standard FIFO rotation methods to minimize waste.
- Safety Protocols: Maintain commercial equipment like high-capacity stand mixers, dough sheeters, and convection ovens safely.
Job Qualifications
- Experience: Minimum of 3+ years of high-volume prep cook experience, with at least 1 year dedicated to scratch baking or pastry work.
- Technical Skills: Master-level knife skills, familiarity with culinary weights/measures, and deep knowledge of cooking techniques (e.g., braising, roasting, emulsifying).
- Speed & Accuracy: Ability to work cleanly and efficiently against tight pre-service deadlines without sacrificing quality.
- Certifications: Valid ServSafe Food Handler or Manager certification.
- Physical: Ability to lift up to 50 pounds (e.g., flour bags cases) and stand for 8+ hour shifts.
Pay: $22.00 - $24.00 per hour
