The Pitmaster/Prep position is extremely special to us. This person not only preps, rubs, and smokes our meats, but completes our side dishes and desserts as well. This is a detail oriented, fast moving, inside-outside, rough and tough job and we are looking for the best of the best!

The Pitmaster position is responsible for preparing and smoking all meats and preparing side dishes and desserts.
- Follows a recipe book to prepare and cook meats, side dishes, and dessert foods according to proper preparation methods.
- Must be able to trim brisket and have experience smoking meats
- Practices safe food handling and cleanliness at all times.
- Prepare food using recipes per the current recipe book.
- Responsible for unpacking and organizing received goods.
- Work may be fast paced and a high degree of quality and accuracy are required.
- Must exhibit maintain a high degree of pace and intensity for an extended period of time.
- Must have strong menu knowledge.
- Ability to communicate with others to ensure accuracy and meat specs.
- Able to adhere to schedule and be on time for shifts.
- Operate and participate effectively in a team environment
