Job Description:
The Kitchen Manager would work with the store's General Manager to run and operate the restaurant. This candidate would have a coaching mentality and work with the line cooks to ensure that all of the Company Recipes/Standard Operating Procedures are being followed properly and food is going out to customers properly.
1. Documentation (DOC)
Responsibilities:
- Time & temperature For Hot Holding Sheet is completed daily.
- Maintain current prep lists
- Ordering and rotating food for storage and when prepped
- Verify line checks are completed twice daily.
- Ensure hood cleaning, pest control, and fire/Ansul systems are up to date.
- Maintain proper chemical storage and ensure test strips are available and used.
- Ensure BOH gets certified Serve Safe
2. Staffing & Personnel (SP)
Responsibilities:
- Review and verify staffing levels and hiring needs.
- Maintain documented discipline and follow progressive coaching standards.
- Ensure schedules are posted physically and digitally.
- Enforce uniform standards including non-slip shoes!
- Maintain an active Coaching Mentality to keep team following Food Specs.
3. Walk‑In Cooler (WI)
Responsibilities:
- Ensure all product is labeled, dated, and rotated (FIFO).
- Maintain proper prep levels.
- Monitor inventory levels and valuation accuracy.
- Maintain cleanliness: gaskets, floors, shelving, box tops.
4. Smoker (S)
Responsibilities:
- Maintain smoker cleanliness and repair needs.
- Ensure safe food handling, including correct protein placement.
- Maintain rack organization.
- Track all smoked meats accurately.
- Follow all SOPs for smoked meats.
5. Dry Storage (DS)
Responsibilities:
- Ensure all product is labeled, dated, rotated (FIFO).
- Maintain organization (faced product, clean box tops).
- Monitor inventory levels and valuation.
- Maintain overall cleanliness and order.
6. Cook Line (CL)
Responsibilities:
- Identify and report repair & maintenance needs.
- Ensure disposables, plates, and supplies are fully stocked.
- Maintain cleanliness of shelving, equipment, and surfaces.
- Ensure power cords and cables are safe and organized.
- Maintain fryers: oil quality, filtering, cleaning, maintenance.
- Maintain coolers, warmers, gaskets, impinger in proper working order.
7. Dish Room (DR)
Responsibilities:
- Identify and report repair & maintenance needs.
- Ensure chemicals are calibrated and stored properly.
- Maintain cleanliness of shelving, equipment, and dish area.
- Ensure dish machine is functioning properly.
- Ensure dishes are stacked clean and dry.
