Iconic San Francisco restaurant Julius’ Castle is excited to announce an exceptional opportunity for an experienced Chef de Cuisine. Qualified candidates will have a career grounded in fine dining kitchens and seasonal French and Italian cookery. They will possess excellent multitasking, interpersonal and communication skills with the desire to develop people and culture while having a strong culinary background and a passion for food and the guest experience. In addition to advanced culinary and kitchen management skills, this individual must have experience in kitchen related cost controls. We are looking for a Chef de Cuisine that will bring creativity along with an unwavering commitment to excellence. This position reports directly to the Executive Chef and will directly supervise the restaurant’s Sous Chef and kitchen staff.
Description
The Chef de Cuisine will work in collaboration with the Executive Chef in overseeing culinary functions for the restaurant including a 100-seat bar/dining room and a robust private dining program. This position will work continually to improve guest satisfaction by serving exceptional food and overseeing the kitchen staff to uphold standards and maintain consistency across the board. In Addition, the Chef de Cuisine will work with the Executive Chef and Sous Chef to ensure that sanitation and food safety standards are managed and maintained.
Key Responsibilities
· Menu collaboration and development.
· Supporting the Executive Chef in managing food cost, labor cost and expenditures
· Staff recruitment, hiring, training and supervision.
· Food quality and consistency control.
·Daily and weekly purchasing
· Food preparation consistency oversight
Additional Responsibilities
· Support the Executive Chef in leading the kitchen team
· Provides direction for day-to-day operations.
· Supports the team with inventory management
· Participates in the monthly financial review meetings
· Upholds and supports brand standards.
· Train on new cooking techniques and equipment to staff.
· Teaches culinary team the importance of consistency in preparation and presentation.
· Responds to and handles guest problems and complaints.
· Maintains a thorough knowledge of food handling and preparation techniques.
· Ensures that quality, portion control, and plate presentation is adhered to consistently.
Qualifications
· Minimum of 5 years high volume/fine dining Chef de Cuisine experience preferred.
· Experience in local, seasonal French and Italian cookery.
· Culinary Arts Degree, equivalent experience and training will be considered.
· Prior experience in culinary management in restaurants with an annual sales performance of $5 million +.
·Knowledge of private dining operations.
· Ability to teach and inspire team members to be their best every day.
· Must have a flexible schedule to work during days, nights, weekends, and some holidays as needed.
