Wellsential Health is currently seeking a Dietary Manager to lead daily dietary operations at Starr County Nursing and Transitional Care. This role is an important part of the facility leadership team and helps ensure residents receive safe, high-quality meals that meet dietary needs, regulatory standards, and resident preferences.

What You'll Do
As the Dietary Manager, you will oversee the daily operations of the dietary department in accordance with facility policies, procedures, and federal and state regulations. You will provide leadership to the dietary team while helping ensure food quality, food safety, sanitation standards, therapeutic diet needs, and resident expectations are consistently met.
Key Responsibilities
- Lead, train, schedule, and evaluate dietary staff to ensure appropriate department coverage and performance.
- Oversee daily foodservice operations, including meal preparation, service, sanitation, inventory, purchasing, and budget awareness.
- Support menu planning, therapeutic diets, substitutions, resident preferences, and special nourishments in coordination with the Registered Dietitian and clinical team.
- Ensure meals meet standards for appearance, taste, temperature, portioning, serving times, and resident diet orders.
- Maintain food safety and sanitation standards, including safe food receiving, storage, preparation, holding, service, and transportation using HACCP guidelines.
- Monitor cleaning schedules, equipment maintenance, infection control practices, and regulatory compliance within the dietary department.
- Process new diet orders and diet changes, update diet cards, and complete assigned MDS dietary/nutrition sections within required timelines.
- Work cooperatively with residents, facility leadership, nursing teams, physicians, consultants, vendors, and other service providers.
What We're Looking For
Qualified candidates should meet at least one of the following regulatory pathways:
- Certified Dietary Manager (CDM) or Certified Food Protection Professional (CFPP); or
- Certified Food Service Manager; or
- Similar national certification for food service management and safety from a national certifying body; or
- Associate degree or higher in food service management or hospitality from an accredited institution, with coursework in food service or restaurant management; or
- Two or more years of experience as a director of food and nutrition services in a nursing facility setting and completion of a food safety and management course of study, as required by applicable regulations
Additional qualifications include:
- Two years of foodservice management experience required
- Prior healthcare foodservice, skilled nursing, long-term care, or senior living experience preferred
- Knowledge of therapeutic diets, food safety, sanitation procedures, food purchasing, receiving, and inventory management
- Ability to lead, train, and coach dietary team members while maintaining a positive and professional work environment
- Strong organization, communication, follow-up, and problem-solving skills
- Ability to work cooperatively with residents, families, facility staff, consultants, vendors, and leadership
- Must meet any applicable State requirements for food service managers or dietary managers
- Must be eligible to work in the United States
