We are looking for a dedicated, efficient, and passionate Prep & Line Cook to join our rapidly growing kitchen team at Poland Provisions, a small family business in Central Maine! This position plays a crucial role in ensuring our kitchen runs smoothly by preparing high-quality ingredients, executing line orders, and helping us deliver incredible breakfast and lunch classics. We do have weekly evening offerings for events as well a prepared meals.
We are a scratch kitchen that welcomes culinary creativity, but our success relies on consistency. We need someone who is highly detail-oriented, thrives in a fast-paced environment, and can follow and reproduce our established recipes to standard. Key Responsibilities:
- Food Preparation & Execution: Accurately measure, chop, slice, portion, and prepare ingredients for our breakfast and lunch menus (sandwiches, salads, hot foods, and specials) according to exact recipe standards.
- Kitchen Flow & Standards: Maintaining familiarity with the menu, following kitchen guidelines to ensure every dish comes out consistent, high-quality, and timely.
- Cleanliness & Food Safety: Maintain a clean, organized, and sanitary workstation. Properly label, rotate, and store all food items adhering strictly to food safety regulations.
- Team Collaboration: Maintain clear, proactive, and positive communication with both the kitchen manager and the front-of-house team to ensure everyone is on the same page prepared.
- Inventory & Logistics: Monitor ingredient levels, recognize & communicate restocking needs promptly, and assist with receiving, unboxing, and stocking deliveries.
- Menu & Event Support: Provide creative input on seasonal ingredients and dish ideas while staying grounded in our core menu. Assist with prep and execution for special catering events as needed.
Qualifications & Requirements:
- The Right Mindset: A genuine passion for cooking, a love for great food, and an eagerness to learn.
- Consistency & Detail: Strong attention to detail with the ability to precisely follow recipes, execute portion controls, and care about presentation.
- Communication Skills: Must be an effective verbal communicator who takes direction well, supports teammates during a rush, and be able to ask for help when needed.
- Experience: Previous experience in a kitchen or culinary setting is preferred, but a strong work ethic and willingness to learn are primary. Knowledge of food handling and safety regulations is required.
- Dependability: Reliable, punctual, and possesses a strong work ethic.
- Physical Demands: Must be able to stand for extended periods and safely lift up to 50 lbs.
