Position Title: Restaurant Operations Student Employee – Front-of-House & Back-of-House
Hourly Rate: $17.50
Hours: Up to 20 hours per week
Eligibility: Open to Collins College of Hospitality Management students
Work Experience Credit: Hours may be applied toward the 800-hour work experience requirement for graduation.
The Restaurant at Kellogg Ranch (RKR) is a fine dining restaurant operated by the students and faculty of The Collins College of Hospitality Management at Cal Poly Pomona. RKR offers an exceptional learning environment where students gain hands-on experience in restaurant operations, culinary arts, and guest service. Students are trained to manage and deliver a real-world dining experience that emphasizes excellence, professionalism, and hospitality.
Front-of-House (FOH) Positions
Students working in the Front-of-House will engage directly with guests and ensure an exceptional dining experience. Positions include:
- Host/Hostess: Greet and seat guests, manage reservations, and coordinate guest flow.
- Server: Provide tableside service, take and deliver orders, and ensure guest satisfaction.
- Bartender/Cashier: Process guest payments accurately and handle POS transactions.
Note: Front-of-House positions require cross-training across multiple roles, and assignments may be rotated based on business needs. For example, servers may also be scheduled to work as hosts, bartenders, or cashiers to support overall restaurant operations and develop well-rounded experience.
- Delivering professional, friendly, and efficient guest service.
- Maintaining knowledge of menu items, daily specials, and wine pairings.
- Following service protocols and safety standards.
- Assisting with restaurant setup, cleaning, and closing duties.
Students working in the Back-of-House will gain hands-on culinary and kitchen operations experience. Positions include:
- Line Cook: Prepare and plate menu items according to recipes and presentation standards.
- Prep Cook: Assist with ingredient preparation and maintain kitchen organization.
- Expeditor (Kitchen): Coordinate food orders, ensuring proper timing, accuracy, and quality before service.
- Following recipes, plating standards, and safety protocols.
- Maintaining a clean and organized kitchen station.
- Assisting chefs and culinary instructors as needed.
- Supporting food preparation for lunch and dinner service.
- Must be currently enrolled as a student at Collins College of Hospitality Management.
- Strong interest in hospitality, food service, or restaurant management.
- Excellent communication, teamwork, and organizational skills.
- Ability to work flexible hours during lunch and dinner service.
- Professional demeanor and commitment to guest service excellence.
- Hands-on, paid experience in a fine dining restaurant.
- Opportunities to apply classroom learning to real-world restaurant operations.
- Hours count toward the 800-hour work experience requirement for graduation.
- Valuable experience in both front- and back-of-house functions.
