Position Overview
We are seeking a dependable and detail-oriented Morning / Afternoon Breakfast & Prep Cook to join our culinary team in Downtown Charleston. This position focuses on breakfast service preparation, daytime production, and foundational kitchen prep supporting multiple outlets within the hotel.
The ideal candidate enjoys organized kitchen work, takes pride in consistency, and works efficiently during early-day production hours. This role helps set the tone for the day’s service, requiring reliability and punctuality for opening kitchen operations, with shifts beginning early in the morning.
Typical schedule: Morning to early afternoon shifts
Responsibilities
- Prepare breakfast items including eggs, omelets, breakfast meats, potatoes, batters, baked goods finishing, and hot/cold stations
- Execute daily prep production for multiple outlets (sauces, dressings, vegetables, proteins, stocks, and par levels)
- Assist pastry and garde manger production as needed
- Set up and break down breakfast line and prep stations
- Maintain consistency and proper portioning according to recipes and standards
- Properly label, date, rotate, and store all food products (FIFO)
- Maintain a clean and organized workstation throughout the shift
- Support lunch transition prep for Grill 225 and Café Pavilion
- Follow all sanitation, HACCP, and food safety procedures
- Communicate with chefs and team members regarding product levels and needs
- Assist with receiving and organization of deliveries when scheduled
Qualifications
- Previous prep cook or breakfast cook experience preferred (hotel or high-volume restaurant ideal)
- Strong knife skills and understanding of basic cooking techniques
- Ability to work efficiently and independently in a structured prep environment
- Must be reliable and punctual for opening kitchen shifts beginning as early as 5:30 AM
- Weekend and holiday availability required
- Strong attention to detail and consistency
- Team-oriented mindset with good communication skills
- Ability to stand for extended periods and lift up to 40 lbs
