ENGLISH SPEAKING IS A REQUIREMENT
SUMMARY
Responsible for all food production and meal service in the kitchen including preparing quality kosher meals according to menus and interacting with residents and staff to understand the resident’s food preferences. In addition to, approved Health department and ACHA regulations
PRIMARY FUNCTIONS
Cooks and prepares food according to recipe following the laws of kosher cooking. Follows standardized menus and special diet orders
Participates in the overall serving and delivery of meals. Plates all food and assists in serving residents as needed
Maintains all culinary paperwork daily; including food temperatures, frig/freezer temperatures and roll call and overall kitchen sanitation temperatures
Maintains trash receptacles throughout the shift in accordance with Health Department standards
Maintain the Memory Care kitchen according to established rules and regulations. Assist in maintaining a safe and sanitary department, with attention to cleanliness of all kitchen appliances, countertops, cabinets, pantry and dry food storage and all other kitchen related items and areas
Responsible for in receiving supplies, examine supplies to ensure quality and quantity meet established standards and assume proper food storing by labeling and dating all food and maintain proper refrigerator and freezer hierarchy per Health Department Standards
Inventories and orders food and non-food supplies and informs Director of items needed or requested
Check food supplies for next meal and begins food prep for next day’s meals as needed
Completes all meal charge slips for any guests and turns in to Admin Assistant
Washes, sanitizes, and stores all pots, utensils and cooking equipment after use each day
Reviews and develops recipes based on type of food to be prepared according to therapeutic diets. Follows standardized menus and special diet orders.
Participate in in-service programs and attend daily production meetings. Universal Philosophy

SUPERVISORY RESPONSIBILITIES
Responsible for all food production in memory care kitchen. Directly work with prep cook to manage meals. Develop par level sheets and work with distribution person to stock the memory care kitchen.
QUALIFICATIONS (EDUCATION and/or EXPERIENCE
Culinary degree; or one to three years related experience and/or training; or equivalent combination of education and experience. LANGUAGE SKILLS Ability to read and understand dietary instructions, recipes, production guides and menus, and fluent in English language (both written and verbal). REASONING ABILITY Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
