Position Overview
Fontana Village Resort & Marina is seeking a hands-on Food & Beverage Operations Manager to oversee daily restaurant, bar, catering, and specialty food venue operations in a fine-dining, resort hospitality environment.
This role is ideal for an operational leader who thrives in a multi-outlet setting, can manage complex scheduling and events, and balances guest experience with strong operational, staffing, and compliance controls. The position works closely with FOH and BOH leadership, the Resort Chef, Banquets Captain, Events, Marketing, HR, and Payroll to deliver consistent, high-quality guest experiences across the resort.
Key Responsibilities
Operations & Guest Experience
- Lead daily FOH and BOH operations across all Food & Beverage outlets
- Maintain visible floor leadership during peak service periods and special events
- Ensure a clean, welcoming, and guest-focused environment across all venues
- Address guest concerns promptly and professionally
- Ensure compliance with food safety, sanitation, alcohol service, and health regulations
Scheduling & Labor Management
- Develop and manage FOH and BOH schedules aligned with forecasted volume, events, and seasonal demand
- Provide direct oversight of catering and banquet event staffing and scheduling
- Work closely with the Banquets Captain to ensure events are properly staffed and run smoothly
- Adjust schedules proactively for call-outs, demand shifts, and overnight coverage needs
Payroll & Tip Oversight
- Audit FOH and BOH payroll prior to submission for accuracy and compliance
- Review timekeeping, overtime, and tip reporting for discrepancies
- Oversee tip pooling, tip sharing, and distribution processes
- Partner with HR and Payroll to resolve payroll issues
- Serve as acting payroll authority for Food & Beverage when the Director is unavailable
Inventory Control & Purchasing
- Assist with food, beverage, and supply inventory control in tandem with the Resort Chef
- Support purchasing activities including vendor coordination and order preparation
- Monitor inventory usage, par levels, and variance across outlets
- Participate in menu costing and cost-control initiatives
- All purchasing and vendor decisions are subject to final approval by the Director of Food & Beverage
Multi-Venue Oversight
- Provide operational oversight for the Coffee Shop, Pool Bar, and Dam Garage
- Support staffing, training, and development across specialty and seasonal outlets
- Ensure cleanliness, guest service standards, and safety compliance across all F&B venues
Recruitment & Team Leadership
- Proactively recruit FOH, BOH, and event staff to maintain a strong staffing pipeline
- Support hiring, onboarding, training, and early retention efforts
- Coach and develop supervisors and hourly team members
- Promote a culture of accountability, professionalism, and hospitality
Overnight & Extended Coverage
- May be tasked with overnight operational support responsibilities as needed
- Provide leadership response to operational or guest issues outside standard business hours
A Day in the Life
You’ll start the day checking dining venues and specialty outlets, reviewing schedules and event staffing needs. The day may include coordinating with the Resort Chef and Banquets Captain, supporting team development, and ensuring service, cleanliness, and safety standards are met. Evenings, weekends, or occasional overnight support may place you on the floor during peak service or events—always focused on supporting your team and delivering a great guest experience.
Qualifications
- 2–5+ years of progressive food & beverage management experience
- Fine dining, hotel, or resort experience strongly preferred
- Experience with scheduling, payroll audits, tip management, inventory control, and multi-outlet operations
- Strong leadership, communication, and guest-service skills
- Ability to work a flexible schedule including nights, weekends, holidays, and occasional overnight coverage
Compensation & Benefits (Pay Transparency Disclosure)
- Salaried position
- Base salary range begins at $47,000 annually
- Final base pay will be determined based on experience, qualifications, and job-related factors, and may vary within the range in accordance with applicable state and local pay-transparency laws

Pay: $48,439.64 - $58,335.91 per year
