About the Role
We are a fast-growing manufacturer scaling to commercial production volumes and seeking a hands-on Production Confectioner to join our team in Arlington, WA.
This role is ideal for someone with commercial candy or confectionery experience who enjoys precision, consistency, and process-driven production. You will be responsible for executing pectin-based gummy recipes at commercial scale, ensuring consistent quality, accurate ingredient incorporation, and efficient batch production.
This is an execution-focused role — not R&D — and is best suited for someone who thrives in a structured production environment.
Key Responsibilities
Production Execution
- Execute commercial-scale pectin gummy recipes with consistency and accuracy
- Operate cooker, depositor, silicone molds, curing racks, and sanding equipment
- Accurately incorporate ingredients per batch specifications
- Monitor cook temperatures, timing, and texture to ensure consistent results
- Demold, sugar sand, and stage finished gummies for packaging
- Maintain strict adherence to established SOPs
Quality & Process Control
- Identify and troubleshoot common confectionery issues (texture inconsistencies, improper gel set, stickiness, sweating)
- Ensure proper ingredient incorporation and uniformity
- Maintain consistent batch-to-batch quality
- Communicate production issues promptly
Documentation & Process Tracking
- Complete batch production records accurately
- Document ingredient usage and measurements
- Follow internal quality and safety procedures
Sanitation & Equipment Care
- Clean and maintain kettles, depositor, molds, and tools
- Maintain organized and sanitary work areas
- Follow food safety standards within a shared commercial kitchen
Qualifications
Required
- 1+ year experience in confectionery, candy production, or commercial food manufacturing
- Understanding of sugar cooking and temperature-controlled processes
- Ability to follow recipes and SOPs precisely
- Detail-oriented with strong consistency in execution
- Ability to lift up to 40 lbs
- Comfortable working weekday production shifts
Preferred
- Experience working with pectin-based gummies
- Experience in high-volume commercial kitchens
- Familiarity with Brix measurement or similar quality tools
