About Vernon's
Vernon's Speakeasy is an intimate, upscale speakeasy in Los Ranchos de Albuquerque. We are a two-layer concept: an immersive, transportive speakeasy experience, and an exclusive membership program for our most committed guests.
We have one goal. Vernon's will be the number one restaurant in New Mexico. Not top five. Not in the conversation. Number one. The Vernon's of today is good. The Vernon's of tomorrow is exceptional, and we are hiring the operator who will help us get there.
The Role
We are looking for a General Manager to own the operation and lead the room to that standard. This is not a back-office seat. You run the floor, set and hold the service standard, develop the team, and own the operation's revenue and profitability. You'll work alongside a chef who leads the kitchen and a lead on the membership side, so your focus stays where it belongs: the room, the service, the team, and the P&L.
You will have real authority, the backing to build something exceptional, and a clear path to equity. This seat is also the launch pad for a growing hospitality group, with operator-equity opportunities in future locations for the right person.
Here is where we are headed, and the GM is central to building it: a premium, evolving program of multi-month culinary seasons, set menus several nights a week, multi-room execution, and a per-guest price point in the $125 to $275+ range. That is the direction, not today's reality. You will help build it. We are not a high-volume bar, and we are not trying to be.
What You'll Own
- Full operational leadership of the room: floor execution, service standards, daily operations, and scheduling
- Building and developing a team capable of delivering a consistent, elevated guest experience across every shift and every room
- Partnering with the kitchen to elevate the food program so it co-headlines with the service
- Driving prepaid and seasonal reservation revenue, and protecting the member experience in the room
- P&L ownership: managing prime cost, hitting EBITDA targets, and running a disciplined operation without compromising the standard
- Leading the weekly leadership cadence and holding the team accountable to the bar
What We're Looking For
- 5+ years as a General Manager or Assistant General Manager in upscale or fine-dining hospitality
- Proven P&L ownership, including food cost, labor, and EBITDA
- A hands-on, on-the-floor leader who is present in the room, not behind a desk
- A track record of developing teams, having hard conversations, and holding people accountable
- Demonstrated ability to drive service consistency across shifts, rooms, and dayparts
- Comfort operating at a premium price point and check average
- A genuine belief in the number-one ambition. We want someone who treats "top five" as a starting point, not a ceiling.
Nice to Have
- Membership, private club, or loyalty program experience
- Wine program literacy
- Multi-unit experience
- Experience opening or scaling a concept
- Experience running set-menu, tasting-menu, or chef's table programs
- Existing relationships with regional or national chef talent
Compensation & Benefits
- Base salary starting at $85,000, with room based on experience
- Performance bonus up to 20% of base, paid quarterly (year-one target cash around $102,000 with full bonus)
