Operations Manager — Old World Pizzeria (Birmingham, MI)
Full-Time | Reports to Ownership / Lead Manager | $18–$24/hr starting + performance bonuses
The Role
The Operations Manager runs the day-to-day of the restaurant and owns the outcome. You keep every shift moving, hold the team accountable, control what we order and what we spend, and make sure standards never slip. This is a hands-on leadership role — you manage from the floor, not the office. When there's a gap, you step in and fill it; when there's a problem, you solve it before it reaches ownership.
What You'll Own
- Operations — Oversee daily front- and back-of-house operations and keep service running smoothly, consistently, and on time across every shift.
- The Floor — Lead by doing. Jump onto any station during rushes, call-offs, or short staffing, and set the pace for the team.
- People — Manage, schedule, train, and hold staff accountable. Coach performance, correct issues early, and document when needed.
- Ordering — Own all ordering and inventory. Set and maintain par levels, place accurate orders, and prevent both shortages and over-ordering.
- Receiving Accountability — Verify every delivery against the invoice — quantities, quality, and pricing. Log discrepancies, reject what doesn't meet standard, and shut down waste and shrinkage.
- Cost Control — Drive food cost, labor cost, and waste toward target. Find the savings and protect the margin without cutting quality.
- Numbers — Track the KPIs, report them honestly, and act on what they tell you.
- Standards — Hold the line on cleanliness, food safety, speed, and brand standards — every guest, every order, every time.
How Success Is Measured
Performance is measured against clear targets, and strong results earn incentive bonuses. Core metrics include:
- Food cost percentage
- Labor cost percentage
- Inventory variance and waste percentage
- Ticket times / speed of service
- Guest satisfaction and review scores
- Staff retention and turnover
Compensation & Benefits
- Starting pay: $18–$24 per hour, depending on experience.
- Incentive bonuses: Performance-based bonuses tied to the KPIs above.
What We're Looking For
- Prior restaurant, QSR, or fast-casual management or supervisory experience.
- Hands-on with ordering, inventory, and receiving.
- A track record of running a tight ship — cost discipline, accountability, and consistency.
- Calm and decisive under pressure; comfortable leading from the floor.
- Available nights, weekends, and holidays as the business requires.
- ServSafe / food handler certification a plus (or willing to obtain).
