Overview:
A Butchers is responsible for cutting and trimming meat from larger, wholesale portions into steaks, chops, roasts, and other cuts. They then prepare meat for sale by doing various tasks, such as weighing meat, wrapping it, and putting it out for display. The Butcher will perform quality inspections, use meat grinders, knives, saws, and other tools to cut meat down into smaller portions, weigh, and package cuts.
Responsibilities:
- Receive, inspect, and store meat upon delivery.
- Sharpen knives and adjust cutting equipment.
- Cut, debone, or grind pieces of meat, including preparing orders to customers’ specifications.
- Weigh and wrap meat or meat products for display or to fulfill customers’ orders.
- Clean equipment and work areas to maintain health and sanitation standards.
- Store meats in refrigerators or freezers at the required temperature.
- Ensure the freshness and quality of meat products by inspecting them for any signs of spoilage or damage.
- Monitor inventory and sales trends and order meat in anticipation of seasonal demands.
- Collaborate with the team to ensure stock levels are maintained and replenished regularly
- Adhere to portion control guidelines for cost efficiency and customer satisfaction.
- Assist with inventory management and rotation of product to minimize waste.
- Adhere to company Hazard Analysis & Critical Control Points (HACCP) and company Standard. Operating Procedures (SOP), Good Manufacturing Practices (GMP) and Standard Sanitation Operating Procedures (SSOP).
- Maintain records for purposes of federal safety and inspections.
Requirements:
- High school diploma or relevant work experience required
- Certificate in Butchery or relevant training is preferred, but not required
- Food handler’s certification/ DOH compliance
- Knowledge of meat preparation techniques and cuts
- Strong to excellent communication skills and willingness to work as part of a team
- Ability to work a flexible schedule including evenings, weekends, and holidays as needed
Physical Abilities:
- Regularly lifting and moving weights of 50 lbs. or more
- Standing or walking for long periods of time, up to 8 hours
- Climbing stairs to service requests
- Bending, stooping, squatting, reaching and kneeling to perform routine maintenance and repairs
- Hand use: single grasping, fine manipulation, pushing and pulling
- Ability to work in a wet and cold environment
- Work in a cold environment with temperatures averaging between 36 – 38 degrees Fahrenheit
- Ability to use hand tools to perform repetitive motions with hands and arms using a variety of cutting equipment
- Ability to use tools and equipment, including box cutters, electric pallet jacks, and other heavy machinery
Education and Experience:
- 2+ years in a butcher role
- Knowledge of animal anatomy and meat preparation techniques and cuts
- Strong knowledge of different cuts of meat and the ability to accurately and efficiently prepare them
- Exceptional knife skills and the ability to use various cutting and grinding equipment safely
- Excellent attention to detail to ensure the quality and presentation of meat products
- Strong customer service and communication skills to effectively assist customers and provide recommendations
- Ability to work in a fast-paced environment while maintaining accuracy and efficiency
- Basic math skills for weighing and pricing meat products accurately
- Knowledge of health and safety regulations in food handling and storage
- Knowledge of industry trends and a passion for delivering high-quality meat products
