We are currently seeking a skilled and passionate Sushi Chef to join our growing team.
Position Overview
The ideal candidate has strong knife skills, experience working with high-quality seafood, and the ability to confidently execute nigiri, sashimi, and omakase service in a fast-paced fine dining environment. This role requires attention to detail, cleanliness, consistency, and the ability to work closely with both kitchen and front of house teams to create a seamless guest experience.
Candidates should be comfortable handling and breaking down whole fish, preparing sushi rice to standard, and engaging in the rhythm and flow of omakase-style service.
Responsibilities
- Break down and portion whole fish and seafood
- Prepare nigiri, sashimi, hand rolls, and other sushi items with consistency and precision
- Execute omakase service with proper pacing, presentation, and timing
- Maintain high standards for cleanliness, food safety, and organization
- Prepare and maintain mise en place for daily service
- Ensure proper storage and handling of seafood and ingredients
- Work collaboratively with the culinary team during service
- Maintain quality and presentation standards set by Norikase
- Assist with inventory, prep, and ordering as needed
- Help contribute ideas for seasonal offerings and menu development
Qualifications
- Previous experience as a sushi chef or omakase chef required
- Experience breaking down whole fish required
- Strong knife skills and understanding of Japanese fish preparation techniques
- Ability to prepare nigiri and sashimi with consistency and attention to detail
- Fine dining experience preferred
- Ability to work cleanly and efficiently in a high-volume environment
- Strong communication and teamwork skills
- Passion for Japanese cuisine and hospitality
- Must be available nights and weekends

Pay: From $16.00 per hour
Work Location: In person
