An International Cook is responsible for efficiently and effectively preparing bulk hot food items for our airline client’s flights. This includes both Domestic and International Flights.
Main Duties and Responsibilities:
- Prepares all Specialty Cuisine dishes as per our client’s menu specifications and recipes.
- Ensure compliance with quality standards, FDA, HACCP & other regulations
- Interprets and implements HACCP procedures which includes proper temperature controls and completing the necessary paperwork
- Prepares bulk hot food promptly and in compliance with kitchen ready times and flight schedules.
- Cooks a variety of main courses (Sauces, Proteins, Starches and Vegetables) items involving long preparation times.
- Assumes responsibility for quality of meals prepared and complies with meal specifications required by airlines.
- Follows airline client’s specifications when preparing all food items.
- Assist with menu presentations.
- Determines production levels and prepares requisitions to obtain the proper amount of supplies and food from the storeroom
- Create sauces from scratch without supervision
- Ability to understand and complete recipes. Follow recipes to exact specifications Interprets specifications and prepares to taste, color, texture and eye appeal.
- Inventories supply levels and requisitions food products as necessary
- Prepares food based on a pre-determined production level
- Keeps kitchen and work areas clean, sanitary, and well maintained
- Maintains proper temperature of all food products
- Works side by side with the Executive Chef and Production Chef as needed
- Assumes other related duties as required or assigned
QUALIFICATIONS; EDUCATION AND EXPERIENCE
- Three plus years' experience working in a fast-paced environment
- Must demonstrate excellent communication skills, both oral and written.
- Must have ability to work under pressure while maintaining composure.
- Should have good working knowledge of airline specifications.
- Must be flexible on days off and start time as we are a 24-hour operation.
- Read, speak and write English
- A minimum of 3-5 years’ experience in a high volume
- Ability to convert to metric measures - with conversion chart
- Must be able to use fingers & hands to handle equipment up to 8 hours a day
- Must possess Basic math skills
- Understanding of HACCP Compliance and implements procedures which include proper controls and completing the necessary paperwork/logs.
- Must have good organizational skills and adaptable to frequent changes
- Must have the ability to apply safety and sanitation standards
- Above average skill level with cutlery, small wares, and equipment
- Must have prior experience with creating sauces from scratch
- Must be flexible to work in a 24/7 environment which includes nights, weekends and holidays subject to change due to shift bidding
- Must be able to work around moving parts & wet floors
- Must be able to walk/stoop/ bend/ stand for entire work shift
- Must be flexible to work in extreme temperature changes and exposure to hot surfaces
- This position requires to be active, walking, heavy lifting and pushing up to 50 + lbs.
