Culture
- Lead, support, and inspire Team Fini with the core LFG values always in mind (LOVE,

- Balance art and commerce to maintain a healthy business, happy guests and employees while
serving hospitality greatness
- Ensure all employees feel safe when they enter the work environment. Schedule routine
employee check-ins with HR to ensure all employee experiences are heard and documented.
- Maintain a positive work environment that also embraces feedback (positive and negative)
and accountability
Daily Operations
- Develop opening and closing procedures for the team so we they can be prepared for all
hours of operation (Monday - Sunday Pizzeria 12-10, Private events Variable)
- Maintain FINI vibe ( aesthetic, hospitality, general maintenance)
- Conduct daily walk-through to ensure DOH , DOB , SLA , Local Fire dept. protocols are
followed. Permits should be posted per state requirements w/ copies saved electronically for
reference.
- Obtain a food handlers license to maintain inspection readiness and help train staff
members to do the same
- Maintain guest facing platforms displaying all menus, hours of operation and general
information ( Fini Pizza website, Uber delivery platform, Google business page, In - store
signage )
- Create a maintenance/utility schedule for all areas of the restaurant (grease trap, hood
cleanings, plumbing & electrical needs, pizza oven repair, rental machine
cleanings - dishwasher & ice machine)
Guest Experience & Quality Control
- Implement staff trainings to create a warm environment for guests (necessary voice
projections, smiles, thank you’s and appropriate follow up questions)
- Read, process, and communicate all guest feedback (face-to-face interactions, reviews, and
emails) to the team & ownership
- Regularly taste all products ( events items, pizzas, salads, Italian ice, desserts, and
beverages) to uphold the FINI standards
- Create a system for answering all guest emails, texts and phone calls - including shift
leaders and cashier team members so we are as responsive as possible (especially with order &
private event inquiries)
- Lead pizzeria and events service to ensure proper wait times and flow occur
Scheduling & Staffing Management
- Maintain a strict labor cost budget of 20% (10% BOH labor,8% FOH labor, 2% events
labor) . Labor tracker sheets should be filled out weekly w/ projections in order to react as
quickly as possible to sales.
- Manage scheduling BoH and FoH. All paycom schedules should be posted
2-3 weeks in advance for all team members (including shift leaders and managers)
- Check employee timecards for schedule alignment , breaks are taken , OT minimized , spread
of hours cut
- Respond quickly to call outs and no-shows to ensure restaurant can operate during all
hours (all managers and shift leaders are help cover open positions )
- Implement Fini training outlines for all positions ( including recipe cards, station diagrams
and checklist.. HR provided*)
- Communicate disciplinary action with HR and ownership present ( firing with HR /
ownership)
- Manage a daily and weekly tip sheet entry process (HR will provide sheets, Legal team
will double check process)
- Distribute weekly paychecks in line with the typical HR payroll process
Administrative Operations
- Send EON reports daily using the provided template
- Cash management - conduct nightly cash drops in a safe, cash withdrawals at the bank,
employee reconciliation and reimbursements
- Manage a personal google calendar & location calendar for weekly meetings on
private events, cost management and overall performance with ownership & HR
- Locations google drive - general organization
- Manage all food & beverage & supplies purchasing for pizzeria , catering, and events (20% food cost, 40% NA bev cost, 20% or lower alcohol cost, 4% or lower operating
costs, merch as little as possible)
- Process invoices for all weekly purchases (alongside production and accounting team). Ideally all
invoices are sent electronically and managed daily in a google sheet.
