Indian River Colony Club is a full service, private country club community of over 800 homes located in Viera, Florida, close to I 95. Our 55+ community is primarily made up of military members, and our mission is to provide exceptional service to our residents. We’re seeking a Temporary Line Cook to join our culinary team at the At Ease Club. This assignment is expected to last 6–8 weeks, with the potential to transition into a full‑time role based on performance and operational needs.
Key Responsibilities:
Food Preparation & Cooking
- Prepare and cook menu items according to established recipes, portion standards, and presentation guidelines.
- Maintain speed, accuracy, and consistency during peak service periods.
- Ensure all dishes leaving the line meet quality and appearance standards.
Prep & Daily Production
- Complete assigned prep lists and maintain proper par levels.
- Follow proper food storage, labeling, and FIFO rotation.
- Assist with batch cooking and banquet prep as needed.
Prep & Inventory
- Complete daily prep lists and maintain proper par levels.
- Follow FIFO rotation and support efforts to reduce waste.
Event & Banquet Support
- Support culinary production for weddings, tournaments, buffets, and holiday events.
- Adapt between à la carte service and high‑volume event cooking.
Sanitation & Safety
- Maintain a clean, organized, and sanitary workstation in accordance with health regulations and club standards.
- Properly break down, clean, and close the line at the end of each shift.
- Follow safe food‑handling procedures at all times.
Team Collaboration
- Work collaboratively with cooks, chefs, and front‑of‑house staff to ensure smooth service.
- Communicate any product shortages, equipment issues, or concerns promptly.
Consistency & Member Focus
Country club dining means serving the same members regularly. Every plate should reflect pride, professionalism, and consistency.
Reliability & Professionalism
Arrive prepared, on time, and ready to contribute to a positive kitchen culture.
Adaptability
Comfortably shift between quick-service items, upscale plated dinners, and large banquet production.
Qualifications
Experience
- 2–4 years of culinary experience in an upscale restaurant, luxury hotel, or private club.
Education
- High school diploma or equivalent required.
- Culinary degree or formal apprenticeship strongly preferred.
Skills
- Strong knife skills and solid understanding of classical cooking techniques.
- Ability to multitask and stay composed in a fast-paced environment.
- Commitment to consistent quality and attention to detail.
Certifications
- Food Protection Manager certification (e.g., ServSafe) or ability to obtain within 30 days.
Physical Requirements
- Ability to stand for long periods, lift up to 50 lbs, and work in hot/cold environments.
Availability
- Must be available nights, weekends, and major holidays, which are peak club events.
