GENERAL RESPONISIBILITIES OF THE POSITION
The Cook assists the Food Service Director and Dietary Supervisor in overseeing the smooth operation of dining services inclusive of preparing palatable menus, and general food handling, storage, and meal delivery. The Cook must ensure that food is presentable and meets the nutritional needs, preferences and requests of the general resident population.
GENERAL TASKS
Every attempt has been made to outline all of the details of this position. However, there may be other tasks inherent in the position that may not be listed below.
· Required to report to your designated work station by your scheduled time.
· Follow the Prep List / Menu List in setting up items for the day and following days.
· Prepare cooking ingredients by washing and chopping vegetable, cutting meat, etc.
· Cooking menu items in cooperation with the rest of the kitchen staff, by following menu and receipts provided by the dietician.
· Ensures all recipes, food preparation and presentation meets The Veranda Assisted Living’s specifications and commitment to quality.
· Monitor special dietary needs of residents as well as their “likes and dislikes.”
· Must wear a hair net, gloves and apron/jacket when preparing food.
· Ensure that food is cooked to the proper temperatures.
· Responsible for assisting the Food Service Director and Dietary Supervisor with the daily operation of the kitchen.
· Prepare simple dishes such as salads, tuna fish, egg salad, chicken salad, entrees, etc.
· Maintain a clean and orderly kitchen by sanitizing surfaces, taking out trash.
· Cover, label and date all foods placed in refrigerator. Do not keep “leftovers” more than three days.
· Measure and assemble correct ingredients for menu items.
· Pulling menu items for the following day so they will be defrosted and workable.
· Ensuring that all food and other items are stored properly.
· Maintain refrigeration and freezer temperature logs.
· Communicate with Food Service Director regarding inventory of food and supplies as well as any existing problems or suggestions.
· Comply with all of the health and safety regulations as per NYS Sanitation Code 10 NYCRR Part 14 and other applicable county and local health codes.
· Ensure that the food prep area and kitchen are cleaned and sanitized at the end of shift.
· Serving meals to residents as required ensuring proper portions and courteous service.
· Be present during meal services on your shift to provide oversight of staff.
· Prepare and serve afternoon and evening snacks when necessary.
· Perform other kitchen duties as assigned.
· Cooperate with all serving/wait staff, kitchen staff, and dish room staff.
· Follow all The Veranda Assisted Living rules and regulations as depicted in your employee handbook.
· Must be present for in-services and required trainings.
· Maintain a positive and professional approach with coworkers and residents.
· Follow all orders given by Food Service Director and Dietary Supervisor.
COMPLETES ALL OTHER INHERENT AND LOGICAL TASKS AND THOSE ASSIGNED BY THE ADMINISTRATOR OR UPPER MANAGEMENT.
POSITION REQUIREMENTS
1. Must be at least 21 years of age.
2. At least a certificate/degree from an accredited culinary school preferred.
3. At least 3+ years’ work full time experience in food services preparation and supervision.
4. Must be flexible as to hours and days of duty, and in urgent situations, work overtime.
5. Must be able to communicate effectively utilizing oral, written, and technical modes of communication.
6. Must be a professional representative of the organization to the community, regulatory bodies, and any other outside entities.
7. Must be able to lead by example as demonstrated by consistently timeliness, task delegation, constant follow up, offering direction, and always available to clients and employees alike in supporting role.
8. Must be very organized and able to complete standard office tasks with minimal assistance.
9. Must demonstrate sound judgment when making decisions, considering client rights, internal and external politics, and existing hierarchies.
