Position Overview
Radish is a groundbreaking corporate catering program, whose recipes are designed by some of the best chefs in the country, including Michelin-starred Bay Area chefs, Top Chef winners, and beloved local restaurants. Radish focuses specifically on employee meals, primarily individually packaged meals delivered hot or cold to offices.
The role of Onsite Sous Chef is responsible for assisting the Executive Sous Chef in running the back-of-house at a location serving up to 200 meals per meal service, for lunch and dinner. At this client location, all food is produced offsite, so the onsite team will not be responsible for meal prep - but will receive meal components daily and oversee their reheating, finishing and assembly in an onsite finishing kitchen, and at client-facing stations. Most meals are served as fully-composed dishes from three stations each serving a daily-changing menu.
This position requires an exceptional level of passion, maturity, and commitment to hospitality. Management and guest engagement style is as important to us as culinary knowledge. Management is expected to lead by example and use an instructive teaching style to empower and motivate their team to give their all on a daily basis; providing an environment of respectful communication, the creation of opportunities for advancement & growth, and the cultivation of individual confidence and creativity among all our cooks.
The Onsite Sous Chef must consistently demonstrate efficiency and responsibility. Taking ownership of our corporate dining services to help us make it the unequivocal best of its kind in the country. The level of professionalism expected is equivalent to what is found in fine dining restaurant kitchens.
Responsibilities
Including but not limited to...
Service Leadership
❖ Ensures that the food served under the Radish name, and with the cosign of celebrity and local chefs, exceeds expectations across the board, and lives up to the standards of excellence associated with these chefs and restaurants.
❖ Meets at TFS Commissary, reviews all food with kitchen leadership, and checks every item in detail to ensure that it is accounted for at the correct quantity or weight.
❖ Travels with vehicle to client location and oads all product in to client location in collaboration with all of onsite team.
❖ Reviews menus in detail with the Executive Sous Chef before service.
❖ Confirms desired plating style with Exec Sous and confirms understanding of all garnishes.
❖ Oversees and participates in heating of all hot products prior to service, and setup of plating lines.
❖ Participates in daily lineup and tasting with staff before service.
❖ During service, directs and participates in plating lines for hot entrees. Engages guests and participates in creating a welcoming and exciting guest experience.
❖ After service, directs and participates in breakdown and cleanup, ensuring adherence to exceptional standards of cleanliness and organization.
❖ Reviews execution plan for PM service and delegates tasks.
❖ Is fully responsible for leading culinary aspects of dinner service, in absence of Exec Sous.
❖ Closes out the kitchen, completes administrative tasks, and leaves the kitchen clean and ready for the following day.
Management & Administration
In collaboration with the onsite sous chef and/or onsite team.
❖ Participates in filling out all onsite time and temperature logs and other QA documentation.
❖ Participates in completing all cleaning and sanitation procedures and logs, and is responsible for these processes after dinner service.
❖ Advises on daily equipment inventory lists.
❖ Participates in collecting data on daily overages regarding all meal services, as well as cold case and other items. Fills out these overages for dinner service.
❖ Sends daily recipe feedback documentation and guest feedback documentation
Requirements
❖ 1-2 years of kitchen management experience required.
❖ 1-2 years experience in fine dining restaurant kitchens including Michelin starred, SF Chronicle 3-Starred or
higher or the equivalent.
❖ 1-2 years of corporate catering or onsite corporate dining experience.
❖ Spanish fluency is not required but preferred
❖ Familiarity and comfort with a wide range of global cuisines
❖ Passion for food, and an interest in both fine dining and exceptional, approachable cuisine
❖ Flexibility with hours and responsibilities. The expected needed coverage will be Monday-Friday but flexibility is desired.
❖ Excellent organization and communication skills; Must be proactive, detail-oriented, accountable, and professional
❖ Strong work ethic, leads by example, teaching-focused management style
❖ Able to work on your feet for up to 10 hours, lift and carry 50+ lb
❖ Ability to make two-year commitment preferred
Required Certifications
❖ A valid California Food Handler Managers’ Certificate or willingness to acquire one within the first month of hire.
Preferred Experience and/or Traits:
❖ Bilingual in English and Spanish.
