Responsibilities
- Prepare and assemble sushi using proper knife skills, food handling techniques, and adherence to recipe specifications
- Execute various cooking techniques including poaching, braising, grilling, and food production to create diverse menu items
- Operate kitchen equipment safely and efficiently, maintaining cleanliness and organization at all times
- Follow food safety sanitizing procedures diligently to ensure a hygienic workspace and safe dining experience
- Assist in menu planning by contributing ideas for new dishes and seasonal offerings
- Maintain high-volume production standards while ensuring consistency and quality in every dish served
- Support dietary department requirements by adhering to dietary restrictions, meal prep guidelines, and food safety management protocols
Skills
- Proven experience in food preparation within a restaurant or fine dining setting
- Strong knowledge of food safety standards, sanitizing procedures, and food handling regulations
- Expertise in sushi preparation, knife skills, poaching, braising, grilling, and other culinary techniques
- Experience with menu planning, recipe adherence, and meal preparation for high-volume production
- Familiarity with operating kitchen equipment safely and efficiently in a fast-paced environment
- Background in catering or large-scale food service is a plus
- Excellent organizational skills with an eye for detail and consistency in presentation
