We at Bam's BBQ and Soul Food are seeking a passionate and skilled Smokehouse Pitmaster to lead our barbecue operations with expertise, enthusiasm, and a commitment to excellence. As the central figure in our smokehouse, you will craft mouthwatering smoked meats, oversee daily cooking processes, and ensure every dish meets our high standards.
Responsibilities
- Prepare and cook smoked meats using various techniques, ensuring consistent quality and flavor profiles.
- Supervise and manage the smokehouse team, providing guidance, training, and motivation to maintain high standards of food preparation.
- Oversee the entire smoking process from selecting ingredients to monitoring temperature controls and cooking times.
- Maintain cleanliness and safety standards in accordance with health regulations and company policies.
- Collaborate with management to develop new recipes, menu items, and special offerings that delight guests.
- Manage inventory levels for meat supplies, wood, spices, and other essentials to ensure smooth operations.
- Provide excellent guest service by engaging with customers about menu items, answering questions, and creating a welcoming atmosphere.
Requirements
- Proven experience in managing or supervising a smokehouse or barbecue kitchen environment.
- Strong leadership skills with the ability to motivate a team and foster a collaborative work environment.
- Knowledge of management principles including inventory control, quality assurance, and safety protocols.
- Experience working in a casino or hospitality setting is preferred but not required.
- Excellent customer service skills with an energetic approach to guest interactions.
- Strong mathematical aptitude for precise measurement of ingredients, portion control, and cost management.
- Ability to handle cash transactions accurately when necessary; familiarity with cash handling procedures is a plus.
- Technical proficiency in using smoking equipment, temperature monitoring devices, and basic kitchen tools.
- Effective conflict management skills to resolve issues swiftly while maintaining positive team dynamics.
- Basic math skills for recipe adjustments, portioning, and inventory calculations.
