The Restaurant Manager for Pèppoli Restaurant will manage all aspects of The Inn’s restaurant operations to ensure five-star service standards. The Restaurant Manager is responsible for maximizing the financial performance of restaurant operations by providing the highest possible guest service, products, and by fostering a positive work environment for all employees.

Essential Duties & Responsibilities:
- Participate in recruitment, hiring, promotion and termination of personnel.
- Complete payroll preparation including totaling timecards and entering hours on computer sheet, if required.
- Prepare and submit product requisitions in EATEC system and generate transfers when needed.
- Prepare employee documents, schedule, and leave requests.
- Counsel employees and follow through on all disciplinary action.
- Prepare employee and managers performance reviews and handle any necessary follow-up action.
- Ensure the accurate completion of monthly dry goods and wine inventories and provide controls to ensure the proper handling and accounting.
- Control labor, operating, food & beverage costs.
- Provide all employees with training manuals and any other documentation as required.
- Work with the Chef de Cuisine on changing out menu items regularly as part of our “Qual” process.
- Be a hands-on leader by providing hands-on assistance whenever and wherever necessary.
- Conduct Huddles on a daily basis.
- Train, develop and motivate staff to exceed established service standards and PBC Universal Service Standards.
- Provide input on all capital expenditures.
- Draft yearly budget forecast and profit/loss statements.
- Responsible for complete analysis of financials including monthly and yearly P&L, productivity and menu abstract review.
- Oversee and manage all private dining inquiries, bookings, coordination and execution.

Ensure that on-going service training programs are provided covering service and sales techniques, including incentive sales contests.
- Handle special requests, complaints and billing discrepancies; offer compensation where appropriate.
- Review guest comment cards; keep records of incidents requiring communication with guests and inquire with all opportunity guests within one week.
- Keep staff informed of VIP and group schedules and any other special arrangements and events and hotel activities.
- Interface with all departments, to ensure business trends for scheduling and world-class service.
- Uphold company standards of conduct, grooming, dress and personal hygiene.
- Represent the restaurant at all appropriate meetings such as staff, pre-convention, training and Food & Beverage meetings.
- Perform housekeeping and maintenance walkthrough, generate reports and follow up with appropriate maintenance requests.
- Follow all PBC, local, state and federal health and safety standards, alcohol awareness and ABC guidelines.
- Other projects assigned by Director of Food & Beverage or General Manager.
Required Skills:
- 3 + years’ experience in management capacity, preferably with a 4- or 5-star resort.
- Must be a team player and able to work well with other managers and staff.
- Excellent management, motivational, communication and organization skills.
- Knowledge of food, wine and spirits required.
- Excellent interpersonal skills and ability to handle difficult people and situations in a professional and poise manner.
- Food safety and Responsible Beverage Service (RBS) certifications.
Desired Skills:
- Restaurant Management experience preferred.
- Understanding of Accounting.
- F&B fundamentals knowledge.
- Attention to detail and situational responsiveness.
