At Pronto Cucina Italiana, we are seeking a reliable, skilled Head Cook to add to our small team
In this role, you will work side-by-side with the Chef during service to maintain our quality standards, control pacing, and ensure every plate leaving the pass meets our exact standards. You will step up as the primary leader on the line when the Chef is off-site, directing station flow, managing ticket times, and keeping the kitchen running smoothly and efficiently.
Key Responsibilities
- Second-in-Command Leadership: Work directly alongside the Chef during service; assume full leadership of kitchen operations, station flow, and expediting when the Chef is absent.
- Line Cooking & Prep Execution: While the person in this position will still be expected to prep, the majority of the work is during service on our busy pasta station.
- Service Flow & Ticket Times: Keep the line structured, organized, and moving quickly during peak dinner rushes, maintaining open communication with front-of-house staff.
- Kitchen Standard & Quality Control: Ensure all stations adhere to strict portioning, temperature controls, food safety, and HACCP standards.
- Inventory & Station Setup: Assist with daily line setup, station prep lists, monitoring stock levels, and minimizing daily food waste.
- Mentorship & Safety: Help guide line and prep staff on proper kitchen techniques, station setup, and maintaining clean, sanitary workstations at all times.
Qualifications & Requirements
- Experience: 2+ years of professional line cooking experience in a fast-paced or scratch Italian kitchen. Previous experience as a Lead Cook, Senior Line Cook, or Sous Chef is a strong plus.
- Technical Proficiency: Strong knife skills, mastery of saute, grill, and prep work, and a thorough understanding of classic Italian cooking techniques and timing.
- Leadership & Temperament: Calm under pressure, clear communicator, and proactive about solving problems during busy services.
- Certifications: Valid ServSafe Food Handler or Manager Certificate.
- Availability: Ability to work evening shifts, weekends, and peak holiday periods as needed.
Pay: $25.00 - $31.00 per hour
