We are looking for a skilled and passionate Chef to lead our kitchen team at our fast-paced broth and noodle bar, specializing in authentic Thai noodle dishes (such as Boat Noodles, Khao Soi, Ba Mee, and Tom Yum). In this role, you will be responsible for maintaining the high standards of our aromatic, slow-simmered Thai broths, managing prep schedules, and ensuring every bowl leaves the kitchen perfectly balanced in sweet, sour, salty, and spicy flavors.
The ideal candidate has a deep appreciation for Thai culinary techniques, thrives in a high-volume environment, and possesses strong leadership skills to guide our line cooks.
Responsibilities:
- Recipe Adherence: Replicate and maintain the exact flavor profiles of our signature, slow-simmered Thai broths, fresh paste formulas, tares, and specialty proteins (e.g., braised beef, crispy pork belly) according to established restaurant recipes.
- Station Management: Lead the line during peak service hours, ensuring precise noodle texture (sen lek, sen yai, mee krob), accurate portioning, and beautiful presentation.
- Inventory & Ordering: Manage inventory levels for specialized Thai ingredients, noodles, and fresh herbs (like holy basil, lemongrass, and galangal); place orders with vendors to minimize waste.
- Quality & Safety: Enforce strict health and safety standards, food rotation (FIFO), and kitchen cleanliness.
- Team Leadership: Train, mentor, and schedule kitchen staff to maintain a collaborative and efficient work environment.
Qualifications:
- 2+ years of experience as a Chef, Sous Chef, or Lead Line Cook in a high-volume restaurant (experience in a Thai concept or specialized noodle bar is highly preferred).
- Strong understanding of traditional Thai flavor profiles, street-food style noodle execution, and broth-building techniques.
- Proven ability to precisely follow and scale standardized recipes to maintain consistency.
- Excellent time-management skills with the ability to handle a fast-paced lunch and dinner rush.
- Valid Food Handler’s Card or ServSafe certification.
- Ability to stand for long periods and lift up to 50 lbs.
Pay: $20.80 - $23.00 per hour
