UWA Sushi & Grill is an upcoming, highly anticipated dining destination located in the heart of downtown Durham. We are bringing a modern, luxurious, and elevated Japanese culinary experience to the area, featuring meticulously crafted sushi, premium grilled dishes, and an innovative beverage program. Cook (Line / Prep)
Job Details: Working in the hot kitchen at UWA Sushi & Grill, the Cook is responsible for preparing hot menu items (grill, tempura, sauces) to our exacting standards. You will work closely with the Chef to ensure every dish meets our visual and flavor profiles.
Responsibilities
- Prepare ingredients and execute hot dishes according to precise recipes and plating guidelines.
- Manage your designated station, ensuring it is fully stocked, organized, and clean throughout the shift.
- Operate grills, fryers, ovens, and other kitchen equipment safely.
- Adhere strictly to all food safety and sanitation regulations (HACCP).
- Assist with inventory rotation (FIFO) and daily prep lists.
Education and/or Experience
- Culinary degree preferred but not required.
- 3~5 years of hot line experience in a high-volume, quality-driven kitchen.
Physical Demands
- Ability to stand for long shifts in a hot, fast-paced environment.
- Must be able to lift up to 50 lbs (e.g., stock pots, produce boxes).
- Frequent bending, stooping, and repetitive hand motions.
Required Skills
- Excellent knife skills and understanding of basic cooking techniques.
- Ability to execute dishes quickly without sacrificing attention to detail.
- Strong communication skills to coordinate timing with the sushi bar and service staff.
- High standard of personal hygiene and kitchen sanitation.
