JOB TITLE: Lead Prep Cook (Must be 18 years of age or older)

Range Start: $18.05/hourly
Range End: $27.07/hourly
CLASSIFICATION: Non-exempt
SUPERVISES: Prep Cooks
JOB SUMMARY: Under the direction of the Food and Beverage Manager, this team member oversees the day-to-day operation of the prep cooks, including guiding subordinate food service staff
ESSENTIAL DUTIES AND RESPONSIBILITIES

Makes daily prep list

Prepares bulk produce, meats, and sauces to recipes and specifications

Peels, cuts, chops, dices, slices, and minces meats, cheeses for production

Chops salads and prepares ingredient items for the cook’s line

Prepares bulk sauces to specifications by following recipes
-
Cleans and sanitizes workstation according to the daily cleaning list
-
Coordinates food production on quantities according to business levels
-
Assists line cooks and kiosk cooks when needed
-
Helps put food away in all areas by organizing freezers, dry storage and refrigerators according to First-In, First-Out (FIFO) method

Prepares food for banquets, kiosks, and any other operation that is designated
-
Portions food out for banquets on plated meals and buffets according to specifications
-
Trains team members to obtain the uppermost product quality, portion control, and presentation with minimum waste

Orders product as needed from approved vendors

Performs all duties in a manner that continually supports the vision, mission, values, and principles of the Resort & Casino

Performs all duties in a manner that adheres to the guest service standards established by the Resort & Casino’s guest service program

Other duties as assigned by the Food and Beverage Manager
EDUCATION REQUIREMENTS

- A High School diploma, or the equivalent thereof, is required
EXPERIENCE AND KNOWLEDGE REQUIREMENTS
The experience and knowledge requirements outlined here are representative of the minimum that must be met by the team member to successfully perform the essential functions of this position, however, higher levels of experience and knowledge than required may be reflected during the recruitment process:

Must be 18 years of age or older

Two (2) years institutional food prep experience is required
- Knife skills are required
-
The ability to read and use standardized recipes is required
-
Thorough knowledge of all institutional kitchen equipment and their proper use is required
-
Food Handler card is required
-
A strong understanding of the principles and practices of team member supervision, along with a strong combination of written and verbal communication skills to write, read, and comprehend written correspondence, concurrent with the ability to effectively communicate with guests and team members of the organization is required
