Job Summary:
We are seeking an experienced cook to join our culinary team. You will be responsible for preparing and serving all items on our Raw Bar Menu with established recipes and food safety guidelines. Your expertise in fish breakdown, sashimi slicing, plating, and all knife work techniques, along with your attention to detail, will contribute to the overall dining experience for our customers.
Duties:
- Prepare, season, and plate all items on the raw bar menu, including sashimi, oysters, ceviche, and tartare
- Ensure that all food is handled according to Milos quality standards
- Monitor levels of fish inventory, butcher enough fish to cover each service, and assist chef in reordering low product levels
- Follow proper food handling and sanitation procedures to prevent cross-contamination
- Clean and maintain the raw bar station, including regular deep cleaning
- Collaborate with the kitchen to ensure timely preparation and delivery of orders
- Assist with meal preparation and other duties as assigned
Qualifications:
- Previous raw bar/sushi experience in a high-volume fine dining establishment or a similar role within the food industry is preferred
- Knowledge of fish breakdown for raw preparation, cleaning of filets, and proper slicing techniques
- Ability to work in a fast-paced environment while maintaining attention to detail
- Strong communication skills to effectively collaborate with kitchen staff
- Advanced fish butcher knife skills for food preparation
- Flexibility to work various shifts, including doubles, evenings, weekends, and holidays
