Bakery Manager/Pastry Chef - Full Time at South Restaurant + Coffeehouse
The Bakery Manager/Pastry Chef is responsible for managing the production of the bakery at South Restaurant + Coffeehouse, and the wholesale baking for Snow City Cafe and Muse. They motivate and support the bakery team to create consistent and exciting baked goods and desserts for the guest. The Bakery Manager/Pastry Chef pushes creativity and excellence while keeping within budget and controlling bakery costs. They work with the Executive Chef and the General Manager to ensure a cohesive bakery program that complements and enhances our menus and overall vision.
- Regularly performs manager log and email review
- Drives training and manages bakers to maximize quality, consistency, and efficiency
- Assists with hiring process which includes interviews, reference checks, arranging for employees to fill out paperwork, completes orientation for new staff
- Demonstrates knowledge in all aspects of a functioning pastry kitchen including breads (yeast and quick), cookies, cakes, tarts, desserts, breakfast pastries, confections, ice cream/ sorbet, and sauces
- Monitors bakery food cost and labor
- Creates special baked goods and desserts for the restaurant and special events
- Develops new recipes and troubleshoots any difficulties or challenges presented by current recipes or par levels
- Trains bakers to keep up with production and ensures standardized recipes are being followed accurately and consistently
- Ensures that the bakery work space is maintained clean and sanitary at all times and encourages staff to re-stock and clean whenever there is a free moment
- Documents all staff and operations issues in staff journals and follows up on any issues from prior shift
This is a full time position, requiring approximately 40-45 hours per week during normal business hours. Must be available for opening, closing, weekday, and weekend shifts.
- Must be at least 18 years of age
- Must be able to communicate, write and understand English
- 2 years experience managing a production bakery preferred
- Must have a current Municipality of Anchorage Food Worker Card
- Working knowledge of Microsoft Office, Excel, Google Drive, and internet navigation
The employee is required to stand for extended periods of time and may occasionally be required to stoop, kneel, or crouch. The employee must be able to occasionally lift or move objects up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
