General Manager:
The Moon Under Water is seeking an experienced General Manager to lead our team in delivering exceptional dining experiences. The General Manager will work directly with the chef-owner and serve as the day-to-day leader of the pub. This person will oversee restaurant and bar operations, financial performance, team development, service standards, and the guest experience across a large, high-volume venue.
Interviews will begin in early July. The selected candidate will join during the final pre-opening phase and have a meaningful voice in finalizing operating systems, service flow, team onboarding, training, and opening plans.
As General Manager, You Will
- Lead day-to-day operations across the pub’s dining areas, two full-liquor bars, courtyard, terrace, sports area, and live entertainment spaces
- Work closely with the chef-owner and leadership team during pre-opening preparations and ongoing operations
- Apply your experience to the final development and refinement of service systems, operating procedures, training plans, and management routines
- Recruit, onboard, train, and develop managers and hourly team members
- Build a knowledgeable, accountable, and hospitality-focused team
- Maintain consistent standards for food, beverage, service, cleanliness, safety, and overall guest experience
- Oversee labor, scheduling, payroll, purchasing, inventory, cash controls, cost of goods, and other controllable expenses
- Manage forecasting, budgeting, and P&L performance
- Establish clear expectations for managers and provide consistent coaching, feedback, and accountability
- Lead high-volume services, private events, sports programming, and live entertainment operations
- Monitor guest feedback and take an active role in guest satisfaction, retention, and recovery
- Use Toast or SpotOn POS reporting and management tools to support informed operational decisions
- Develop and maintain productive relationships with food, beverage, service, and equipment vendors
- Ensure compliance with health, sanitation, workplace safety, alcohol service, and employment requirements
- Maintain the appearance, condition, and operational readiness of the property
Requirements
- A minimum of five years of successful restaurant leadership experience, including experience as a General Manager or in a comparable senior operations role
- Proven experience leading a high-volume, full-service restaurant, pub, or comparable hospitality operation
- Strong experience managing full-liquor bar operations, preferably across multiple bars or service areas
- Experience recruiting, onboarding, training, and developing large hospitality teams
- Strong financial acumen, including experience managing budgets, labor, inventory, cost of goods, forecasting, and P&L performance
- Experience with scheduling, inventory, payroll, and restaurant management platforms
- Clear communication, sound judgment, and a hands-on approach to leadership
- The ability to remain organized and decisive during busy services and high-pressure situations
- Experience with a new restaurant opening is strongly preferred
- Experience working in a chef-owned, owner-operated, or independent restaurant is preferred
- Experience with live entertainment, large outdoor spaces, sports programming, or private events is a plus
- ServSafe Manager certification or the ability to obtain certification before opening
- Availability to work evenings, weekends, holidays, and peak business periods
- New restaurant opening experience is a definitive plus
