Our goal is to have two in-house team members who split their time between production and maintenance, keeping the kitchen running, clean, maintained, and ready every day.
Both positions are approximately 50% production and 50% maintenance. They work alongside the production team while ensuring equipment, tools, and the facility remain reliable and continuously improving.
The difference between the two roles is not technical ability—both are expected to develop the same maintenance skills. The difference is ownership.
Shared Responsibilities (Both Roles)
Both positions are responsible for:
Production (Approx. 50%)
- Food preparation
- Packing and labeling
- Cleaning and sanitation
- Setup and teardown
- Shipping support
- Assisting wherever production needs additional help
- Maintaining an organized, clean work environment
Maintenance (Approx. 50%)
- Preventive maintenance
- Routine repairs
- Equipment troubleshooting
- Tool organization
- Equipment cleaning and upkeep
- Facility improvements
- Equipment installation and modifications
- Identifying issues before they become failures
- Knowing when to repair internally and when outside support is needed
Preferred Technical Skills
Experience with any of the following is highly valuable:
- Welding
- Mechanical troubleshooting
- Refrigeration systems
- Compressor replacement
- Electrical fundamentals (breakers, conduit, wiring where legally permitted)
- Safe use of hand and power tools
- Preventive maintenance
- Equipment inspection
- Documentation and communication
- Safe repair practices
Role 1 – Production & Maintenance TechnicianPrimary Focus
This role is responsible for keeping the kitchen operating reliably every day. This person focuses on routine maintenance, preventive maintenance, equipment repairs, cleanliness, organization, and supporting production. They help execute facility improvements and equipment builds while ensuring the kitchen stays in excellent working condition.
Success Looks Like
- Equipment stays operational.
- Maintenance is completed before failures occur.
- Production is well supported.
- Work areas remain organized and clean.
- Repairs are completed efficiently.
- The kitchen operates proactively rather than reactively.
Role 2 – Production, Maintenance & Project Support TechnicianPrimary Focus
This role performs all of the responsibilities of Role 1 while also serving as the team's first-response project support person. When a new issue, improvement, or experiment arises, this person takes the first look before involving leadership. They investigate, research, test ideas, gather information, and present practical options.
Additional Responsibilities
- Investigate new equipment or process issues
- Research replacement parts and suppliers
- Source components (Amazon, Alibaba, industrial suppliers, etc.)
- Prepare prototypes or small experiments
- Test potential solutions
- Compare repair or upgrade options
- Document findings
- Present recommended solutions with estimated cost, timeline, and tradeoffs
- Coordinate project preparation before larger implementation begins
Success Looks Like
When a new challenge appears, leadership receives:
- A clear explanation of the issue
- Possible causes
- Multiple solution options
- Cost estimates
- Parts and supplier recommendations
- Suggested next steps
This role helps move projects forward instead of waiting for direction.
Team Structure & Reporting
Together, these two positions create an in-house production and maintenance team that keeps the kitchen running smoothly while supporting continuous improvement. Both roles are cross-trained and interchangeable on the production floor, sharing responsibility for daily production support, preventive maintenance, equipment reliability, and facility upkeep.
Role 1 is primarily focused on maintaining the day-to-day reliability of the kitchen—keeping equipment maintained, repairs completed, and production moving efficiently.
Role 2 performs the same core responsibilities while also serving as the first-response project support person, taking the lead on investigating new problems, researching solutions, sourcing parts, preparing experiments, and presenting options for larger maintenance and engineering initiatives.
Operationally, both positions report first to the Operations Team Leaders, who are responsible for daily priorities, production assignments, scheduling, and overall execution. For maintenance planning, facility improvements, equipment builds, troubleshooting, engineering projects, and long-term operational improvements, both positions also work closely with Turk and Ruby, who provide technical guidance, project direction, and strategic oversight. This structure ensures clear day-to-day accountability while maintaining direct collaboration on the kitchen's long-term growth and continuous improvement.
