Sous Chef
Job Overview:
As a Sous Chef, you will be responsible for accurately and efficiently preparing, portioning, cooking, and presenting a variety of hot and/or cold food items for various meal periods, including breakfast, lunch, dinner, and special/catered events. You will be expected to follow recipes and product directions, estimate food requirements, check production, and keep records to plan production requirements and requisition supplies and equipment. Additionally, you will be responsible for Leading a culinary team in production of food, cleaning and sanitizing workstations and equipment, following all Messina's, client, and regulatory rules and procedures.
General Responsibilities:
- Lead and inspire a team of culinary professionals by setting clear expectations, providing guidance and training, and promoting a culture of collaboration, respect, and excellence.
- Ensure the consistent delivery of high-quality food items by Following Standardized recipes, supervising and training kitchen staff.
- Work closely with companies’ senior management team.
- Consult with executive chef to Monitor inventory levels and order supplies as needed to maintain proper food and labor costs.
- Work closely with the General Manager to develop pricing strategies that maximize profitability while maintaining guest satisfaction also accommodating special dietary needs as necessary.
- Ensure compliance with all food safety and sanitation regulations and guidelines.
- Maintain a safe, clean, and organized kitchen environment by following all health and safety regulations and procedures.
- Continuously evaluate kitchen processes and procedures to identify areas for improvement and implement changes as needed. Demonstrates intermediate to advanced knife skills and performs other assigned duties and responsibilities.
- Foster a positive and professional work environment by maintaining open lines of communication and providing coaching and feedback to team members.
- Ensure that all kitchen equipment is properly maintained and serviced via communication by email to executive Chef.
- Communication with staff at companies commissary for proper forecasting and needs of supplies to ensure success of service.
- Facilitate in execution or coordination of special events, Catering events, cooking classes, and food festivals, to showcase the culinary team's talents and promote the Organization.
- Follows established recipes and instructions to prepare food and ensure customer satisfaction, while also accommodating special dietary needs as necessary
- Utilizes various cooking techniques to prepare and cook foods according to order, including both short and long preparation times.
- Participates in relevant training programs, including allergy and foodborne illness in-service training, safety meetings, and hazard assessments, while reporting any accidents or injuries in a timely manner.
- Assist with the Hiring and Training , & development of Staff.
- Follows company policies and procedures regarding the reporting of accidents and injuries.
- May Perform Other Duties and Responsibilities as Assigned.
Job Qualifications
Experience/Knowledge:
- High School diploma, GED or equivalent experience preferred.
- 5 or more years of related work experience preferred but not necessary.
- Knowledge of basic operation of equipment and cash-handling procedures preferred.

License/Qualifications:
Certifications: A Current & Valid ServSafe Food Managers Certificate.
