Position Summary
The Assistant Kitchen Manager (AKM) supports the Kitchen Manager and General Manager in overseeing all back-of-house operations. This role is responsible for maintaining food quality standards, ensuring operational efficiency, supporting team development, and upholding safety and sanitation compliance.
The ideal candidate is a hands-on culinary leader who thrives in a high-volume kitchen, leads by example on the line, maintains composure under pressure, and is passionate about developing strong teams while delivering consistently excellent food.
Key Responsibilities (include but are not limited to):
Operational Leadership
Support daily kitchen operations to ensure smooth, efficient, and high-quality food execution.
Lead shifts and manage line performance during peak service periods.
Uphold all recipes, plating standards, prep procedures, and portion controls.
Assist in managing ticket times, kitchen flow, and communication between front and back of house.
Ensure all company policies, procedures, and brand standards are consistently followed.
Food Quality & Safety
Maintain the highest standards of food quality, consistency, and presentation.
Ensure compliance with all health department regulations, food safety standards, and sanitation guidelines.
Monitor proper food storage, labeling, rotation (FIFO), and temperature logs.
Promote a culture of cleanliness and organization throughout the kitchen.
Team Development & Leadership
Assist in recruiting, training, and mentoring kitchen team members.
Provide hands-on coaching and real-time feedback during service.
Help conduct performance evaluations and support corrective action when necessary.
Foster a respectful, accountable, and team-oriented kitchen culture aligned with NHG values.
Lead by example through professionalism, work ethic, and positive attitude.
Inventory & Cost Control
Assist with inventory management, ordering, and receiving processes.
Support food cost control through portion management, waste reduction, and proper prep execution.
Ensure accurate storage and organization of all products.
Help manage labor effectively based on business levels and seasonal volume.
Facility & Equipment Oversight
Ensure all kitchen equipment is maintained, clean, and operating properly.
Report maintenance needs promptly and assist in preventative maintenance efforts.
Promote and enforce safe knife handling, equipment usage, and workplace safety practices.
Qualifications
Minimum 2–4 years of culinary leadership experience in a high-volume restaurant environment.
Strong knowledge of kitchen operations, food safety, and cost control practices.
Proven ability to lead a team in a fast-paced setting.
Excellent communication and organizational skills.
Ability to stand for extended periods and lift up to 50 lbs.
Availability to work evenings, weekends, holidays, and peak seasonal schedules.
Must be legally authorized to work in the United States.
