Job Summary

Duties
- Lead and supervise kitchen staff, including dietary aides and culinary team members, fostering a collaborative and motivated work environment
- Develop innovative menus that incorporate diverse cooking techniques such as poaching, braising, grilling, and food preparation for various service settings
- Oversee food safety sanitizing procedures, ensuring compliance with all health regulations and standards
- Manage food handling processes to ensure quality, consistency, and safety during meal preparation and service
- Coordinate meal production for large-scale events or high-volume dining operations while maintaining attention to detail in presentation and taste
- Implement food safety management practices, including proper sanitation, storage, and temperature controls
- Train staff on knife skills, food industry best practices, and serving techniques to enhance overall team performance
Qualifications
- Proven experience in dietary department operations or dietary aide roles within healthcare or institutional settings
- Extensive background in food service with a focus on menu planning, food preparation, and high-volume production
- Strong knowledge of culinary techniques such as poaching, braising, grilling, and food handling procedures
- Familiarity with food safety sanitizing procedures and food safety management systems
- Experience working in fine dining or restaurant environments with emphasis on quality presentation and customer satisfaction
- Demonstrated leadership skills with the ability to train and motivate a diverse culinary team
- Excellent knife skills and proficiency in various cooking methods including catering experience and serving in fast-paced settings
