Job Responsibilities
The barback is the beating heart of bar operations. Primarily a support role, the barback’s duties pertain to anything necessary to keep the flow of bar operations moving along smoothly. Supporting up to four bartenders at once, this position requires an extreme level of awareness and attention to detail. Without strong barbacks, bar operations can hit red lights which slow down the speed of service and overall experience that we aim to provide at Paper Plane.
Principal Duties
- Supports the bartender and keeps operations running smoothly by washing and polishing glassware, restocking refrigerators, refilling ice when wells are low, replacing punch/beer kegs, refilling syrups/citrus bottles/liquor bottles etc. and always anticipating the next item needed before it fully runs out, washing bar tools, etc.
- Is an effective team player and has an in depth understanding of the bar layout and location of all product (alcohol and non-alcohol).
- Possesses a strong ability to follow direction and accomplish tasks with little to no supervision.
- Has a thorough understanding of equipment behind the bar and knows how to troubleshoot specific problems (e.g. freezer making chopping sound, low pressure on punches, cleaning of washing machine filter, etc.)
- Can lift 50 lbs. or more with no issues, and knows how to utilize rolling cart/dolly for heavier items i.e. full size kegs.
- Has effective communication with bartenders, both verbal and non-verbal (touch/hand signals) and has the ability to prioritize most urgently needed items to keep operations moving smoothly
- Has an extremely high sense of awareness and urgency and stays very active constantly scanning for potential issues/needs.
- Assists in clearing the bar top and keeping bar top and service decks clean and organized.
- Must show strong initiative and be proactive round the clock.
- Has a “set up for success” mentality and ensures upon transition of AM and PM shifts that all duties have been fulfilled and that incoming barback has everything needed to operate effectively.
- Has a thorough understanding of stock location in liquor room, primary cabinet, kitchen, and walk-in fridge/freezer. Knows that bar as well as they do the rest of the Paper Plane facility, in the case that a special item is requested, does not hit any red lights because of a lack of knowledge of items location.
- Must be familiar with all closing and breakdown procedures including but not limited to detailing 3 comp sink, washing/buffing/restocking refrigerators with glassware, properly repackaging unused garnishes in Cambros as well as capping citrus bottles and storing properly for next day use, cleaning and detailing all used bar tools/equipment, placing empty bottles near Kitchen exit, proper breakdown of glassware washers, and removal of garbage bags to dumpster.
