Tous les Jours is a French-Asian inspired bakery café dedicated to baking fresh daily using premium ingredients. From signature cloud cakes, mousse cakes, and artisan breads to handcrafted pastries and desserts, we create joyful experiences through beautifully crafted baked goods. We are opening our newest location in McKinney, TX, and are building our founding back-of-house production team.
ABOUT THE ROLE
We are seeking dedicated Production Team Members to join our back-of-house team. Depending on your skills and interests, your role may focus on bread and pastry baking, cake decorating and finishing, or a combination of both. Full training will be provided on Tous les Jours recipes, techniques, and quality standards.
Schedule: Morning shifts available as early as 5:00 AM; include weekends and holidays
Store Opening: First week of May (Tentative)
RESPONSIBILITIES
Baking & Production
- Mix, scale, proof, shape, and bake a variety of artisan breads, rolls, croissants, and pastries according to Tous les Jours recipes
- Operate commercial ovens, mixers, proofers, and dough sheeters safely and efficiently
- Monitor baking times and temperatures to ensure consistent product quality
- Prepare fillings, toppings, glazes, and cream bases for breads, pastries, and desserts
- Open the bakery for early morning production shifts and ensure all products are ready before the store opens
Cake Decorating & Finishing
- Assemble, layer, fill, crumb-coat, ice, and decorate cakes including fresh cream, buttercream, mousse, and cloud cakes
- Execute custom cake designs including smooth finishes, piping, lettering, borders, and themed decorations
- Decorate and finish pastries and dessert items with attention to visual detail and brand standards
- Receive and manage custom cake orders from customers in person and by phone, ensuring accuracy and timely completion
General
- Maintain cake and pastry display cases with fresh, visually appealing products throughout the day
- Complete daily production list requirements accurately and on time
- Follow all food safety and sanitation standards at all times
- Track inventory of baking and decorating supplies and report restocking needs
- Collaborate with team members to meet daily production goals
- Support and train new team members as needed
- Wash, rinse, and sanitize all baking equipment, tools, pans, and utensils after each use
- Assist with scheduled deep cleaning of kitchen equipment and storage areas
- All team members are expected to maintain a clean, neat, and professional appearance at all times and wear closed-toe, non-slip shoes appropriate for kitchen environments
QUALIFICATIONS
- Previous experience in baking, cake decorating, pastry, or food production is preferred; training will be provided for the right candidate
- Familiarity with professional kitchen equipment, including ovens, mixers, proofers, dough sheeters, and piping tools, is an advantage
- Strong attention to detail in both ingredient measurement and cake decoration
- Ability to follow recipes precisely and maintain consistent quality standards
- Comfortable working in a fast-paced environment and stand for extended periods
- Able to lift up-to 50 lbs and work in warm kitchen conditions
- Reliable, punctual, positive, and team-oriented
- Available for early morning shifts, weekends, and holidays
- Food Handler certification required, or willingness to obtain one prior to the start date
