Tartine Bakery is hiring a full-time Pastry Baker with viennoiserie / lamination experience to join our LA Commissary Production Team in the heart of the West Adams Arts District.

About the Role
You’ll be part of a skilled team producing some of Tartine’s most beloved pastries. From flaky croissants to seasonal tarts, your work will help deliver our signature quality to locations across Los Angeles. This role is hands-on, production-focused, and ideal for someone who loves the rhythm and satisfaction of a busy bakery kitchen.
Key Responsibilities
- Demonstrated hands-on experience with viennoiserie production, including croissants, danishes, and other laminated dough products.
- Strong technical proficiency in dough lamination processes, including mixing, sheeting, folding, and proofing to achieve consistent quality and structure.
- Ability to execute precise lamination techniques in a high-volume production environment while maintaining product integrity and adherence to quality standards.
- Keep a clean and organized kitchen space
- Collaborate with the team on improving production and workflow
What We’re Looking For
- 1–2 years of experience in a production bakery, pastry shop, or similar setting
- Strong attention to detail and a love for craft
- Ability to work efficiently in a high-volume environment
- Familiarity with professional baking tools and equipment
- A positive attitude and team-first mindset
- Reliable, punctual, and committed to food safety and cleanliness
- Must be available to start work at 5:00 am and work weekends (Friday–Sunday required)
