Drums VS Flats is one of Charlotte's fastest-growing food trailer brands, known for bold flavors, exceptional customer service, and a loyal customer following. We operate throughout Charlotte at Charlotte Premium Outlets, festivals, corporate events, private caterings, and community events.

This position is designed for an individual with previous management, leadership, or supervisory experience who wants to help lead a team while learning every aspect of operating a successful mobile food business.

What You'll Be Doing
As our Assistant General Manager / GM in Training, you'll work directly alongside ownership while learning every aspect of the business.
Responsibilities include:
- Leading daily shifts and setting the standard for the team
- Coaching, motivating, and holding team members accountable
- Delivering exceptional customer service
- Managing food quality, speed, and consistency
- Assisting with inventory, prep, and organization
- Maintaining food safety and sanitation standards
- Training new team members
- Solving problems and making decisions during busy service periods
- Assisting with opening and closing procedures
- Helping prepare the trailer for festivals, caterings, and corporate events
You'll also rotate through every station to fully understand the operation.
Fry Station
Cook chicken while maintaining quality, timing, and consistency.
Prep & Expo
Prepare sides, plate orders, and ensure every meal meets our standards.
Customer Service
Take orders, process payments, and create an outstanding guest experience.
Schedule
This is a full-time leadership position.
Typical Schedule
- Wednesday–Sunday operating schedule
- Monday may be used for food prep
- Tuesday may be used for trailer prep, cleaning, maintenance, or event preparation
While our normal schedule is Wednesday through Sunday, festivals, catering events, and corporate bookings occasionally require 5–6 working days per week.
Flexibility is essential for this role.

We're Looking For Someone Who Has
- Previous management, supervisor, or leadership experience
- Strong leadership and decision-making skills
- Excellent people and communication skills
- Outstanding customer service abilities
- A positive attitude and strong work ethic
- The ability to remain calm under pressure in a fast-paced environment
- A desire to grow into a General Manager role
- Flexibility to work 5–6 days per week, including weekends, festivals, and occasional prep days
- A reliable personal vehicle and valid driver's license (non-negotiable). This position requires traveling to multiple locations throughout the Charlotte area, and dependable transportation is required.
- Willingness to learn every aspect of the business, including food preparation, trailer operations, event setup, and team leadership
Restaurant management, food service leadership, hospitality management, retail management, and team leadership experience are all highly valued.
