We're looking for a passionate, disciplined, and team-oriented Sushi Chef who takes pride in quality, consistency, and hospitality. At Yoichi, every handroll is prepared to order directly in front of our guests, creating an interactive dining experience where precision, timing, and attention to detail matter.
Responsibilities
Prepare nigiri, sashimi, hand rolls, and other Japanese dishes with precision and consistency.
Prepare and portion fish, seafood, rice, sauces, and other ingredients according to Yoichi's recipes and standards.
Ensure the highest standards of freshness, quality, cleanliness, and presentation.
Maintain a clean, organized, and food-safe workstation throughout each shift.
Follow all health department regulations, food safety procedures, and proper sanitation practices.
Work closely with the kitchen and service team to provide an exceptional guest experience.
Assist with daily prep, inventory rotation, receiving deliveries, and maintaining proper product storage.
Help maintain consistency in recipes and plating standards.
Support opening and closing kitchen duties.
Contribute to a positive, respectful, and team-focused work environment.
Qualifications
Previous experience preparing sushi or working in a Japanese restaurant is preferred.
Strong knife skills and attention to detail.
Passion for Japanese cuisine and willingness to continuously learn and improve.
Ability to work efficiently under pressure while maintaining quality.
Strong understanding of food safety, sanitation, and proper food handling.
Positive attitude, reliability, and excellent teamwork.
Ability to stand for extended periods and lift up to 50 lbs.
Weekend and evening availability is required.
