LEAD COOK (FULL TIME)
Wolf Brewing Company is seeking passionate and creative culinary professionals to expand our culinary team!

Reports to: Director of Culinary Operations and Owners
Summary/Objective:
The Lead Cook is responsible for preparing and/or directing the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. The Lead Cook is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud. The Lead Cook’s responsibilities include assisting the Director of Culinary Operations in preparing entrées, advising Line Cooks on suitable portion sizes, and ensuring that food items are stored at the correct temperatures. The Lead Cook should also be able to train and give direction to Line Cooks, Prep Cooks, Dishwashers and Food Runners - and attend all mandatory meetings. In addition, the Lead Cook is responsible for opening/closing duties, and minimizing labor costs (by making cuts) as business levels dictate.
To be successful as a Lead Cook, you should be knowledgeable of various cooking techniques and have a passion for food. Ultimately, an exceptional Lead Cook should be able to work every station in the kitchen, in a fast-paced environment and demonstrate excellent organizational, communication, and time management skills.
Essential Functions:
· Prepares or directs preparation of food served using established production procedures and systems.
· Determines amount and type of food and supplies required using production systems.
· Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
· Complies with established sanitation standards, personal hygiene and health standards.
· Observes proper food preparation and handling techniques.
· Stores food properly and safely, marking the food item name, date and the initials of the individual who prepared the item.
· Reports necessary equipment repair and maintenance to supervisor/owners.
· Correctly prepares all food served following standard recipes and special diet orders.
· Plans food production to coordinate with meal serving hours so that excellence, quality, temperature and appearance of food are preserved.
· Apportions food for serving.
· Maintains daily production records, waste logs and logs Back of House employee meals.
· Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
· Completes food temperature checks before service.
· Report to work in a neat and clean uniform. Well-groomed hair and personal hygiene are essential.
· Supervising the work of Line Cooks, Prep Cooks, Dishwashers and Food Runners in a professional manner, to ensure that all given tasks are completed in a timely manner.
· Ensuring that all cooking stations are adequately stocked with the necessary meal ingredients and cooking equipment.
· Ensuring that all cooking stations and kitchen surfaces are cleaned and disinfected before and after each shift.
· Adhering to standard food rotation practices to reduce food wastage and minimize the risk of contamination.
· Assessing the quality of delivered food supplies to ensure that it meets restaurant standards.
· Report to work in a neat and clean uniform. Well-groomed hair and personal hygiene are essential.
· Perform other duties as directed – in a positive, respectful and professional manner.

Work Environment:
This job operates in a kitchen environment, housed with equipment such as an oven, stove, fryers, dishwasher, slicer, mixer, chef’s knives, etc. The employee is frequently exposed to high heat, steam, fire, loud noises and cleaning chemicals.
Physical Demands:
The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. Walk and stand during entire shift. Continuously reach, bend, lift, carry, stoop and wipe. Remain stationary for long periods of time. Frequently wash hands. Be able to lift up to 35 lbs. Be able to manipulate fingers, hands and arms to cut, measure, pour, serve, carry and wipe. Be able to hear and talk. Good close and distance vision and ability to adjust focus between the two.
