Job Title: Chef de Cuisine – Residential Dining
Location: San Diego, CA
Salary: $5,720 – $7,575/month + 10% 401(k) contribution, full medical/dental/vision benefits, and tuition benefits for yourself or eligible family members
Hours: Full-time, 37.5 hours/week with flexibility for evenings, weekends, and special events
About the Role
A leading higher education institution is seeking a talented Chef de Cuisine to lead culinary operations for its large-scale residential dining program. This role oversees menu development, food quality, staff leadership, and cost management for a high-volume, award-winning campus dining operation serving students, faculty, staff, and guests.
Key Responsibilities
- Lead and supervise a diverse culinary team, including chefs, cooks, custodians, and student staff
- Plan, develop, and execute menus for residential dining, special events, and themed dinners
- Maintain the highest standards of food quality, presentation, and safety
- Oversee purchasing, inventory control, and vendor relationships to ensure cost efficiency
- Train and mentor staff on cooking techniques, safety standards, and service excellence
- Ensure compliance with health department regulations and internal sanitation policies
- Collaborate with leadership to enhance menus, drive innovation, and elevate the dining experience
Qualifications
- Degree in Culinary Arts or bachelor’s in hospitality, nutrition, or related field
- Minimum 4 years of culinary experience and 5 years in a supervisory role within a high-volume food production environment
- Proven ability to control costs, manage budgets, and maintain quality in a large-scale operation
- Strong leadership, organization, and communication skills
- Proficiency in computerized menu management systems and kitchen operations software
- ServSafe certification (or ability to obtain within 2 months of hire)
