Puckett’s Restaurant is seeking an energetic, organized, and hands-on Assistant Kitchen Manager to help lead kitchen operations at our Nashville International Airport location.
The Assistant Kitchen Manager works alongside the Kitchen Manager to ensure food quality, food safety, inventory control, labor management, and team development. This position is ideal for an experienced Kitchen Supervisor, Lead Cook, Sous Chef, or Assistant Kitchen Manager looking to take the next step in their leadership career.
This role is heavily focused on execution, team support, coaching, and ensuring every guest receives the quality and hospitality experience that defines the Puckett’s brand.
Key Responsibilities
Kitchen Operations
- Assist in managing daily kitchen operations
- Lead shifts and oversee kitchen execution
- Ensure recipes, portion standards, and procedures are followed
- Monitor ticket times and kitchen productivity
- Maintain food quality and presentation standards
- Support smooth operations during peak business periods
Team Leadership
- Assist with training and onboarding new team members
- Coach and develop cooks and prep staff
- Help create a positive and accountable team culture
- Support performance management and employee development
- Lead by example through professionalism and work ethic
Inventory & Product Management
- Assist with inventory counts and product ordering
- Monitor product levels and communicate inventory needs
- Ensure proper receiving and storage procedures
- Support food cost control initiatives
- Minimize waste and maintain proper product rotation
Food Safety & Compliance
- Maintain cleanliness and sanitation standards
- Ensure compliance with health department regulations
- Follow company food safety procedures
- Assist in maintaining ServSafe and food safety standards
- Support airport operational and security requirements
Labor & Scheduling Support
- Assist with staffing and scheduling needs
- Support labor management goals
- Help ensure proper coverage during operating hours
- Step into leadership responsibilities when the Kitchen Manager is unavailable
Qualifications
- 2+ years of kitchen leadership experience preferred
- Experience as a Kitchen Supervisor, Shift Leader, Sous Chef, Lead Cook, or Assistant Kitchen Manager preferred
- Strong communication and leadership skills
- Ability to work in a fast-paced environment
- Knowledge of food safety and sanitation standards
- ServSafe Certification preferred
- Reliable attendance and strong work ethic
- Ability to work mornings, evenings, weekends, and holidays
- Ability to stand for extended periods and lift up to 50 pounds
