Bar Manager / Bar Lead (Fine Dining)

SALT. is seeking a skilled and motivated Bar Manager / Bar Lead to lead and elevate our beverage program. This is a hands-on leadership role for someone who thrives in a fast-paced, hospitality-driven environment and is passionate about building a high-quality bar experience and developing a strong team.
At SALT., the bar plays a central role in the guest experience—from curated wines and craft cocktails to thoughtful non-alcoholic offerings. This position is ideal for a hospitality professional who values consistency, creativity, and operational excellence.
- Develop, maintain, and execute a high-quality beverage program (wine, cocktails, and non-alcoholic offerings)
- Train, mentor, and lead bar staff to ensure consistent service and product knowledge
- Conduct pre-shift tastings and ongoing education for the front-of-house (FOH) team
- Manage ordering, inventory, audits, and proper stock rotation
- Monitor beverage cost of goods sold (COGS), profitability, and cost controls
- Build and maintain relationships with vendors and distributors
- Oversee daily bar operations, including opening/closing procedures and cleanliness
- Ensure compliance with all alcohol service laws and safety standards (BASSET certification required)
- Address guest needs and resolve service issues professionally
- Collaborate with ownership, Executive Chef, and General Manager to align with SALT.’s vision
- Represent SALT. in marketing, social media, and community or industry events
- 2+ years of bartending experience in a fine dining or upscale environment
- Previous leadership or supervisory experience preferred
- Strong knowledge of spirits, wine, cocktails, and current beverage trends
- Experience with inventory systems, ordering, and cost control
- BASSET (Illinois alcohol service certification) and Food Handler certification, or ability to obtain
- Strong communication, organization, and problem-solving skills
- Ability to remain calm and effective in a high-volume environment
- Ability to stand and walk for extended periods
- Ability to lift and carry up to 25 lbs
