Responsibilities
- Prepare a variety of sushi, sashimi, and other Japanese dishes according to established recipes and standards
- Maintain the highest standards of hygiene, safety, and cleanliness in the kitchen
- Source fresh ingredients and ensure proper storage to uphold quality and freshness
- Collaborate with kitchen staff to coordinate meal preparation and presentation
- Develop new sushi recipes and presentation techniques to enhance menu offerings
- Monitor inventory levels of ingredients and place orders as needed
- Ensure consistent portion control and presentation standards for all dishes
- Adhere to food safety regulations and sanitation procedures at all times
- Train junior kitchen staff on sushi preparation techniques and safety protocols
- Assist in menu planning and contribute ideas for seasonal or specialty items
Experience
- Proven experience as a Sushi Chef or in a similar role within Japanese cuisine or fine dining establishments
- Extensive knowledge of sushi preparation, knife skills, and ingredient handling
- Experience working with various culinary tools, including sushi knives, rice cookers, and presentation utensils
- Familiarity with food safety standards and sanitation practices relevant to sushi preparation
- Ability to work efficiently in a high-pressure environment while maintaining attention to detail
- Experience sourcing fresh seafood and produce from reliable suppliers
- Prior experience mentoring or training kitchen staff is preferred
- Knowledge of culinary arts related to Japanese cuisine, including traditional techniques and modern innovations
