Position Summary
The Line, Prep & Dishwasher role at Hundred Mile Brewing Co. is responsible for executing high-quality, scratch-made food with consistency, efficiency, and attention to detail. This position is a cross-functional BOH role that supports all kitchen operations, including line cooking, food preparation, and dishwashing, depending on shift assignments and business needs.
This role plays a critical part in delivering an exceptional guest experience by maintaining excellence in food safety, cleanliness, speed of service, and teamwork.
Core ResponsibilitiesFood Preparation & Execution
- Execute all menu items according to HMBC recipes, specifications, and presentation standards
- Prepare ingredients and components for service (prep lists, batch prep, station setup)
- Maintain consistency in portioning, cooking techniques, and plating
- Ensure all food is produced with a high level of quality and attention to detail
- Properly label, date, and rotate all products (FIFO)
Dishwashing & Kitchen Support
- Operate dishwashing equipment safely and efficiently
- Maintain a clean and organized dish area at all times
- Wash, sanitize, and properly store all dishes, utensils, and kitchen equipment
- Support overall kitchen cleanliness, including trash removal and organization
- Assist with maintaining clean floors, drains, and work areas throughout the shift
Speed, Flexibility & Efficiency
- Maintain urgency and awareness during service to meet ticket time expectations
- Adapt quickly between stations (line, prep, dish) based on business needs
- Prioritize tasks effectively during high-volume periods
- Work clean and organized to maximize efficiency and minimize errors
- Communicate clearly with team members to ensure smooth service flow
Cleanliness & Food Safety
- Follow all health department regulations and food safety standards at all times
- Maintain a clean, organized, and sanitized workstation throughout the shift
- Complete opening, closing, and side work checklists consistently
- Ensure proper food storage, temperature control, and cross-contamination prevention
- Participate in deep cleaning and ongoing kitchen maintenance
Teamwork & Communication
- Communicate respectfully and effectively with all BOH and FOH team members
- Support team members across all stations during peak service times
- Step into any assigned role (line, prep, dish) as needed without hesitation
- Receive and apply feedback and coaching with a growth mindset
- Contribute to a positive, solutions-oriented kitchen culture

Qualifications
- Previous kitchen experience preferred (line, prep, or dish)
- Ability to work in a fast-paced, high-volume environment
- Strong attention to detail and ability to follow recipes and systems
- Basic understanding of food safety and sanitation practices
- Ability to stand for long periods and lift up to 50 lbs
