We are looking for a dedicated and energetic Bakery Food Technologist to join our growing team in Southern California.
What You Will Do
In this role, you will bridge the gap between creative baking and large scale manufacturing. Your split schedule will keep things fresh, as you spend your time between our test kitchen in Redlands and our manufacturing facility in Perris.
Create and Refine: Develop, test, and perfect new cake recipes and product lines aligned with customer goals.
Scale It Up: Lead bench top testing, run formulation trials, and scale small batch successes into full commercial production.
Evaluate Quality: Analyze product texture, crumb structure, flavor profiles, and shelf life to ensure perfection.
Keep It Safe: Partner with quality assurance and production teams to reinforce top tier food safety, GMP, HACCP, and SQF standards.
Document the Science: Log development stages, ingredient specs, trial results, and verify first print labels for allergen and nutritional accuracy.
Solve Mysteries: Assist with root cause investigations for product deviations and run environmental swabbing tests to keep our facilities spotless.
What You Bring to the Table
Experience: Three to five years of experience in bakery R and D or food manufacturing.
Education: A degree in Food Science, Baking and Pastry Arts, or Culinary Science is highly preferred.
The Bakers Mindset: A strong understanding of baking science, ingredient functionality, and formula math.
Safety First: Familiarity with GMP, HACCP, and food safety regulations.
The Hustle: Ability to stand, bend, and lift up to fifty pounds in active kitchen and production environments.
Mobility: Reliable transportation to travel between our Redlands and Perris facilities as project needs evolve.

Responsibilities
Develop and refine new cake recipes and product lines aligned with company and customer goals
Conduct formulation trials in the test kitchen and scale formulas to full manufacturing production
Evaluate product attributes such as texture crumb structure flavor profile and shelf stability
Document development stages including ingredient specifications batch adjustments and trial results
Source and evaluate raw materials for product innovation and cost optimization
Complete and review product specification packages and verify first print labels for ingredient accuracy and allergen declarations
Follow and reinforce quality assurance procedures including GMP HACCP OSHA and SQF regulations
Audit nutritional panels and allergen statements against ingredient specifications
Conduct product weight and temperature verifications to confirm label compliance
Perform environmental monitoring tasks such as allergen microbiological and sanitation validation swabbing
Assist in root cause investigations for product deviations or non conformances
Collaborate with production purchasing and quality teams to support product launches
Support training initiatives on product specifications and quality expectations
